I’ve seen most of the fried chicken recipes on UA-cam at this point, and Quang’s is the best by far. His older videos are where I learned how to fry chicken and have been a hit everywhere I go ever since. Man is the fried chicken king. I’m waiting for Tran’s Chicken n Chips in the future! I don’t even time frying chicken I just listen to the oil while it’s cooking. So it’s weird seeing other people (not you Quang lol) that use thermometers and timers 😂😂
When using a pot like this I used to do the same thing. But when relying on a gas stove, it's a pain having to turn thr heat off/down to prevent the oil getting too hot. I moved to a deep fryer a year and a half ago. It's so much more reliable. I can actually use a time frame to work out things are cooked properly. More importantly it helps when experimenting with cooking at different temperatures which have made a big deal to me in the last year.

Yep. I posted about a year ago that I felt the crispy bites were altered. And it definitely was cause you could hear a rat piss on cotton during those “crispy” bites
instead of water, I would have used a couple sticks of butter in a pot melted it added the spices, and cooked them down a little then injected the buttery spice.
