It was literally a call back to Yoda. Luke was becoming like Yoda, wise in his old age but with still more to learn. It's all within the lore of Star Wars. The green tinted milk scene was literally part of the old man hermit act. Rey came there expecting the hero of legend, but that isn't how life works, even heroes get old and become ghosts, just like Yoda and Obi-Wan and eventually Luke himself.
