      I have tried over medium, easy and sunnyside. Can't get past the runny texture. I got to like over hard when I was in Kuwait. Hardboiled and over hard were the only way to get real eggs. Now, I just get better eggs: farm fresh and local rather than store bought.

      aww, that is such a shame, really. I'm not bashing on you at all but there is certain part of egg love you're missing. But I'm sure,you're still a lovely person despite your awful handicap. Actually, I'm pretty sure because we are having a decent and civil conversation on the fucking youtube. We should be proud and eat some eggs in our liking for celebration one day.
      (also, fresh eggs rule, I grew up in a small town...sigh)

      Green eggs and ham is my favorite! I scramble mine shamefully soft, and add spinach, diced zucchini, scallions, diced ham, and top it with Swiss cheese or gruyere. Sometimes I'll even add some fresh holy basil and/or rosemary if I'm feeling frisky.
      YUM.

      SaberofSpades it’s usually because of the loose egg white that form it. You can use something to strain them out, and if the egg is fresh it will have less of those runny egg white

    Pro french omelet tip: Switch to a back hand grip when inverting your omelet onto your plate.
    Also some french chefs will insist that you cannot let your butter brown, and you must use white pepper, to insure a perfect color on your omelet. Trust the fussy advice of french chefs at your own risk.

      +Bowser Communist White pepper has it's uses... they're very few and far between outside cuisine classique to be sure and they absolutely require a very frugal usage, but they do exist.

      Omurice is basically just the french omelete without being rolled up and being dropped over ketchupy rice with bacon chopped into it. Its not bad but I find the vinegar taste abit too strong.

      You add 1 tsp water and 1/2 salt when mixing the 3 eggs and let it set for a minute then cook on low while mixing it slowly. Dont rush it !!!

      Roy Pol form fresh ground chuck into a patty, season with salt and pepper, cook patty in cast iron skillet until desired doneness, put on toasted bun with condiments of your desire. Pretty simple.

    I followed your method and made perfect Gordon Ramsay eggs! I love them and I even did them the next time without the cheese and chives, going for a lighter option, and they were still excellent!     I think that it is good to note that when cooking with fresh mushrooms, you don't want to salt them until they have given up all their liquid first. Otherwise the liquids will be pulled out and won't cook out and you get a gross runny mushroom rather than a nice browned mushroom and the excess liquid will ruin your omelet.

    I used to HATE eggs with a burning passion. Ever since I tried the French omelet technique with chives, feta cheese, and an ever so light sprinkling of gorgonzola to give it that fresh bite I've been obsessed. It's such a fun omelet to make too and so rewarding when you get it right. Next I'll try Gordon ramsey's scrambled eggs.

    So I know this is a super old video, but this morning I made my son some scrambled eggs. I kept the eggs moving, and since we both like a more firm cook on our eggs, I just left them in a bit longer. The result was a great fluffy slightly firm scrambled egg. Thanks for the tips and tricks :)

    I use rubber on my non stick because plastic can melt if you're stupid with it

      yup, got carried away with al the cooking shows, turned my head around for five seconds and my eggs were dark red from the spatula. I'm not saying I'm not dumb sometimes when I cook but I also cook a lot so accidents happen

      The tefal pan he uses in the beginning can actually cope with metal. But yeah, the other non-stick pan needs rubber or silicon. Not melty plastic sporks.

      Not You silicon is super non sticky and also flexible so it's great for multi purpose work. My favourite utensil is a silicon spatula. Great for mixing, spreading, icing, etc.

    Babish, you are the only person I've ever seen who lightly scrambles the egg before making it an omelette. I just dump then add a lid, and flip when the edges lift. Then again, I like my omelettes runny on the inside, and thats just how i was taught... Idk. Eggs are great

    Helpful tip to those new to eggs and who have pets. Most dogs and cats LOVE eggs. Its an easily digested protein that has great flavour and an easy to eat texture. So if your eggs flop, don't toss them! So long as they have pet friendly ingredients, and you aren't overdoing the portions, give fido or mittens a tasty treat. Watching your fur babies monch up your food with unbridled delight will make you feel better about the oops.
