Fresh rolls are my new favourite jam!! I cook some rice vermicelli noodles to put inside. I use romaine, mango, avocado, cucumbers, red pepper. And I make a similar sauce as well. But I add garlic cloves to mine, a little oil, & cilantro and lime juice. Flavour explosion!!

Fresh spring rolls are always amazing. For folks allergic to peanuts or just dont like the thick dipping sauce...I sometimes just dip mine in a little coconut aminos and it tastes great!
Ooh...I’ll have to add this to my try list! A cool tip I learned to not waste ginger is to use a regular spoon to skin the ginger root. It’s not as time consuming as you might think and you don’t waste glorious ginger! Excellent recipes!
I can’t do peanut or almond butter so I usually do a cashew dip. I essentially start it like the cashew cream but I add soy sauce and sriracha. It’s super good! Also pro tip on making summer rolls; you only want to quickly submerge the paper. When you pull it out it should still be pretty stiff (that’s what she said 😉) but by the time you put stuff in it and go to roll it, it’s soft. This prevents it from breaking so easily! I used to do it the way you did it and my life changed when I figured out the right way!
I just made my own version. Carrots, cucumber, avocado, tomato, tofu (with salt, pepper and garlic powder), and peanut sauce. My non-vegan sister was asking for seconds and we both LOVE it!
Hi Eamon & Bec! My family eats spring rolls all the time. One tip is to take time to roll it like a burrito (tucking in the 2 ends) so your fillings don't fall out the bottom :) love you guys!
My tip for everyone when making spring rolls is that when you soak the paper that when you take it out it’s still kinda hard so it’s easier to roll and it’s easy to take out of the bowl
went out and made this immediately after you posted. AMAZING. So fresh and yummy and I still feel good after stuffing my face! Instead of the mushroom+onion I used my carrot peeler to make ribbons of carrot and cucumber. Maple in the peanut sauce was clutch

So I just made this sauce- like just. Made. It. 10 minutes ago. And it’s fanfreakingtastic! I used it as a sauce for my veggie stir fry. I substituted 1/2 coconut aminos and 1/2 liquid braggs for the soy sauce. Added some toasted cashews and brown rice. Omg! Best plant based sauce ever! 🙏🏼

Two suggestions, half peanut butter, half tahini, and use a peeler for the ginger, you won't lose as much. Spring rolls are my "go to" snack, so many variations! Great job! 😊
I always add rice noodles to my summer rolls, for extra crunch~ SO YUM! Y’all should try adding those to your rolls. They also are a great addition for adding “bulk” to the roll, and are super cheap, also gluten-free, and easy to prepare. Love y’all’s Freestyle Friday videos!
I make basically the same sauce and it's really yummy. I use coconut aminos instead of soy sauce and almond butter or tahini instead of peanut butter and it's amazing.

hot tip on the mango slicing. slice all around the pit like an avocado. slice it into 4 long quarters and peel the skin back. easier to cut the pit out

You don't need warm water for the rice papers! Wet them thoroughly with room temperature water and they get tender but not floppy, and by the time you put all your ingredients in it, it's floppy and you can easily roll them!!

Dude I HATE cutting mangos! Thanks for the hot tip on cutting them. Rolls look dank! Oh also a tip on getting the skin off of the ginger without wasting a bunch of it is using a spoon to scrape off the skin. It just peels off the skin pretty easily and you get a little more ginger. Love ya'll!

Pro tip - soak your rice paper wraps in cold water from the start of your prep. You don't have to worry about them falling apart, or about heating water. Just takes a little extra patience for them to soften ;)

Another super easy freakin' BOMB sauce is: - Hoison sauce - sriracha - peanut butter - just a splash of water to thin it out SOOOO GOOD. You can probably try adding some sriracha to your sauce to spice it up too!!
You guys inspired me to make these when you were eating them on an older Mexico video I think. Anyway I always use almond butter and the sauce comes out awesome! Thanks for sharing 😊
Just gotta let you in on a little mango trick - hold the mango with the other end upward and then cut the same way but place the knife on either side of the little dot where the stem was. It's easier because you always avoid the pit then! That might make no sense but basically just do exactly what you did but put the other end of the mango on top ;-)

Jeanette Swedlove You could wrap it in soy wrappers! They aren't slimy at all and are pretty flavorless. Some kind of big, leafy lettuce would work as well! :)
Maureen I believe these ‘fresh’ ones are actually called summer rolls so look out for that on menus! Don’t quote me on that but I’m sure it works either way! Love this x

I'm all about mixing the kitchen and making random wraps more than about anything.

Hey Eamon, try using 2 spring roll wrappers. You can wrap it tighter and it holds together better.

Yum, I love fresh spring rolls. But I use lettuce, cucumber and bean sprouts in them. The peanut sauce definitely makes them next level amazing!

Try to add a little bit of sesame oil to the peanut sauce. I do with mine and it's amazing!

Just a tip just use regular temp water to soak the rice paper then wrap, if u soak it in hot water it will be soggy, sticky and hard to roll

Rice paper rolls aren't slimey. After they are wrapped, the rice paper is dry but supple and provides a little bit of resistance when bitten into.

Sunflower seed butter tastes the closest to peanut! It’s delicious! My little one has peanut and tree but allergies!!! Definitely sunflower butter!
