    1N4007 - 1000V , 1A, often used as a (small) power rectifier.
    1N4148 - 100V, 150mA, often used as a signal detector.
    The physical dimensions of the active part of the diode are different, the 1N4007 has more area. to handle more current.
    The doping of the semiconductor is different to allow higher voltages for the 1N4007.
    The ‘reverse recovery time’ for the 1N4148 is fast, sub 10ns so it will work well at high frequencies. That parameter isn’t even specified for the 1N4007 so it is not suitable for high frequencies.
