You have a great point and that is true, also the wrong Prague powder will make you sick, we are not curing anything that's why the time to brine is low. Prague added to the brine changes texture, bark, smoke ring, and flavor. It all depends on what you like or trying something new. Adding anything to a culinary process will always be subject to debate and often it will decide if it is good or great. Most often I dry rub and rest with salt and pepper overnight as everyone else, and it tastes like every other pulled pork in the USA. As in the video you end up with something special. I greatly appreciate your opinion and I know others do as well, thank you for that.
That is a good question lol, you are correct it looks a bit off and silly after I look again. It is for sun protection. I have a chemical burn on my right arm that I need to keep out of the light as much as possible. Making videos can be complicated; many videos are recorded on the same day while equipment is set or much-needed help is around. somedays it works others it will not. hopefully, I was able to get you to at least try wet brine in this method. regardless thank you for your feedback

lol, thanks for the comment, it was humorous to me however I do not play the pronoun game. I had to wear sleeves for many months due to a chemical burn. I'm just enjoying life and relaxing.
