- Ingredients:
Crust:
300g flour
Pinch of salt
175g butter, chilled and cubed
3 tbsp cold water
1 egg (for dough)
1 egg yolk (for egg wash)
Filling:
450g strawberries, sliced
450g rhubarb, sliced
170g powdered sugar
45g flour
Instructions:
Mix flour and salt in a bowl.
Cut in butter until crumbly.
Add egg and water, mix until dough forms.
Divide dough (2/3 and 1/3), shape into disks, chill for 1 hour.
Combine strawberries, rhubarb, powdered sugar, and flour. Set aside.
Preheat oven to 200°C (400°F).
Roll out larger dough portion, line a 9-inch pie dish.
Add filling.
Roll out smaller dough portion, cut strips, and create lattice or pattern on top.
Brush with egg yolk.
Bake for 45-50 minutes until crust is golden and filling bubbles.
Cool before serving.
