Try using Sultanas or the green sweet kind... More than happy to clarify any doubts you have Wash the dry ginger before boiling Caramelise 1/3rd of the sugar makes sure to use aluminium vessels Don't soak the ginger and Tartric acid in aluminium transfer to steel then..
