As always in your video, I learned something new today. I was not aware that the macMini is a vlan-aware device...does that mean it can act as a router or L3 switch? I assume Windows PC's Ethernet port is a regular host port that only handles untagged traffic, correct? How about Linux PC?

Sorry but I am not aware of any way provided by Ubiquiti software to save power... I use APC PDU to cut power to the units which I don't use.
thanks for the video. is there any documentation somewhere for the cli commands to use in those different unifi devices?
You can search edge switch cli PDF to find an old document. Even though it's not for current UniFi switches, it may still help.

Yes it can. Search MacOS routing in my channel.
Linux can for sure, for example UDM Pro :D I am not sure about windows though.
