Excellent choice! My last meal, in Seoul (contract work for nine years), was raw soy crabs. I, personally, like Pro Soy Crab (restaurant name (2 locations in Gangnam)). The steamed egg/quiche-like dish has fermented freshwater shrimp as the salty seasoning.
If you get a chance, I highly recommend you try some hanwoo (Korean beef) BBQ. So difficult to get outside of Korea. Flavorful, but not with as much fat content as wagyu, so you can enjoy more of it.
