Since Bulma's Blue/Green hair is dyed, I don't think it would change to black, especially since Trunks is a half saiyan and had originally had purple hair that was dyed blue. Also, since her wish wasn't specific and what she had wished for just power and the power of a super saiyan can be acquired as a half-saiyan just as easily (seemingly) and requires less from the Dragon in just turning her into a half-saiyan, this is more likely to happen. As the only saiyan of reference is Goku, it is likely that she would had just wished to turn herself into a daughter of her former self and Goku. Especially, something similar to a Female Trunks albeit with Goku's DNA instead of Vegeta's. So her hair should be the same color as it was by default. The only different is that her ears and eyes would be more saiyanesce (Saiyan like) and she would have a tail. That is it. "How are you sure the Dragon would just turn her into a half-breed?" Because the Dragon is canonically limited in what it can do and is a very logical entity. Therefore, if nothing is specified and the Dragon only do so much, then it will seek to do the very minimum it can do unless specifications are granted, in which case if it cannot do then it would push for the very minimum that the wisher is willing to allow to perform the wish. So yes, the Dragon would just turn her into a half-bred if she did not specify it any further, even if the Dragon could turn her into a full blooded saiyan. This also could be by intention since messing too much with reality even if able to do so may bring more notice from a certain God of Destruction which Shenron canonically fears.
Dr. Briefs has blue hair... Trunks' hair follows manga design, but doesn't make it to Super... As for the second thing, the what-if is called "What if Bulma became a Saiyan" not "Half-Saiyan" If Shenron could change the entire DNA composition and everything on King Piccolo and countless times on Bulma's booty and whatnot, why would he be limited to only making halflings??? Interestingly when you mix yellow and purple, you get grey but in quantities provided by industry products, you get brown as the blue in industry provided colors is less concentrated therefore over saturated with yellow and red thus creating a sort of murky Orange which we all acknowledge as brown. Humans tend to have brown hair. So maybe that is Akira Toriyama's means of providing some genetic diversity to the humans in Dragonball. Of course, it doesn't make sense why Chichi and Yamcha have black hair, but then again maybe Chichi and Yamcha aren't the same ethnicity as Bulma. Bulma represents Japanese people while Chichi and Yamcha might represent other ethnicities similar to Shampoo in Ranma 1/2 being Chinese or Chun Li being Chinese.
I would rather see a what if Bulma and Chichi became half Saiyans. It would start out just like how this story went but chichi goes with them not having enough power the Eternal dragon makes them half Saiyans. Which technically speaking makes their accurate Superior to a pureblood Saiyan.
While Videl is my favorite Saiyan transformation what-if Bulma is second favorite, both have personalities that work well with being Saiyans and aggressive tendencies. Little note, it seems Great Apes are not aggressive towards each other, not confirmed but it is implied from Bardock's team as they talk about not remembering much but are still working together. Think it's a group thing for them. I do think Goku would win just because of his training, but she would certainly put up a better fight than Yamcha at the time because of her physiology.
Man I haven't been watching many of your what if's lately cause not many peaked my interest but this one did.. it may turn into a full of series like one of masakoX what if l, that is what I can see from this one 😊

You know to maybe also make Baba more relevant etc… Oh and maybe Roshi wishes for youth upon realizing he may need to take being a very healthy mentor more seriously seeing as how rapidly Bulma is growing??? He may as well help teach Launch as well to to help tame her more Sneezy Blonde Haired feisty 😈 side as well as make her feminine blue haired side more competent to deal with conflict??? We may as well have both Launch and Bulma as Z FighterZ while getting Chi Chi to endure extra Training knowing her crush on Goku. Like for example we have a fan who made Nam for instance, a Time Patroller in Xenoverse 2 Oh and Ram Fam or however you spell her name. Imagine her learning Maiden Powers to compliment her Feminine Wilds, from the Maidens of Helese from Universe 2 oh and Zamasu being sooooo disgusted by that Stinky Fighter who, lost to Killin’s backside booty butt blaster boom boom maneuver…🤣😂 That Zamasu almost refuses to possess his a body but does so just to show why mortals must die or some shit!!’😂😂😂 Zamasu possessing that guy from the tournament who lost to Krillin’s butt maneuver would be something wouldn’t it!???🤣😂 I’m still trying to figure what that What iF would look like because there are a lot of wacky characters to go with. If you can pull off a What iF where all the 21st Budokai contestants become Battle Hardened Brawling Badasses and act as an extension of the Dragon Team/Z FighterZ I’d totally watch it. Especially with Launch’s Knock Off Super Saiyan Sneeze 🤧 transformation🤣😂
I doubt that Bulma being older would make her more powerful. As you say, Bulma's never hit anything in her life, and Goku got some training in from his 'grandpa' Gohan. Just as importantly, young Goku has lived rough these years hunting and fishing for his food and traveling the hard way. Bulma has lived in the lap of luxury. Also, Saiyans have differing aging patterns than humans. Bulma might have actually shrunk and age regressed a bit! On the other hand, if 'girls maturing faster than boys' holds true for Saiyans, this might leave her more or less as she is. At least with that rather open wish, the dragon was thoughtful enough not to turn Bulma into Goku's twin brother! LoL Shenlong usually does more or less provide the spirit of the wish as well as the letter, even in the case of evil characters. Although later years does have Shenlong being perhaps a bit more snarky.

Which might also explain why the dragon didn't take years from her age to make her Goku's age, so that she'd get more power from being her actual age? That explains why she's able to display and effectively use ki powers right out the gate without ever feeling ki flow before or certainly ever using any techniques, and can even outdo Goku in Pilaf's steel death chamber. Logically, she'd have Goku's 'at the time' martial arts capacity as well? Without the 'Be like Goku' wish, being a Saiyan alone would probably make her little different than her Dragonball GT daughter Bulla! Anyway seeing her roughing it in later installments caused me to imagine Bulma as a bratty, smartphone obsessed babysitter for a Goku as a kid who wears some 'tailed animal' playsuit, the parents return home to find the babysitter dressed in the same playsuit as the kid, acting just the same, tearing up the house, and completely uninterested in her smartphone!
A very interesting idea but you made Bulma to strong here. She has no combat training and she would be nowhere near the level of Master roshi that's ridiculous. She wouldn't be much stronger then she was before the wish.
I heard of what if Chi-chi became a saiyan from Abbas but this is new! Bulma a saiyan? I think it will be Vegeta Wishing or bulma wishing to be one
