As someone who only ate bonito for the first time this year, amazing. I tried a raw piece while we filleted and it just melts in the mouth unreal, they are also excellent brined and smoked and make excellent smoked fish pate. Love your work
I’ve only caught 1 or 2 bonito when I was treating in jervis bay, the first one I threw back because I thought it looked a bit small and the second one was decent enough but I had no idea what they taste like so I looked it up rq and read that they were oily and not flavoursome at all so I threw him back too, only to pick up my phone again to read ‘the Australian Bonito on the other hand, is a very nice tasting fish cooked or eaten as sashimi with soy. Haven’t had the chance to get another one because of lockdown.
Awesome video again. One thing I can never understand is how they are easier to spear in nsw but in Qld they seem to be impossible to spear. Never over reef and moving super fast. Maybe it’s a different species here but I’ve only ever seen one speared in our entire spearo community
So i found this for ages that they would just rocket past me and never stop mainly in deeper water. In the shallows they seem to be easier to get close to and lay in a shot
@@WetMammal Influence from the Watsons leaping bonny? Common around Sydney too, no where near as good eating. That and people leaving them in the sun with all the blood in then complaining, as I doubt anyone that actually knows how to treat and prep fish would put proper Bonito in the undesirable list 🤷♂️.
@@cozab5487 That's really interesting ive yet to eat a WLB, I dont think people understand that if a dead cow was treated the same way they treat their catch it would probably taste like crap too
@@WetMammal Let me change that a bit, "no where near" as good was a bit too strong haha, I'd say WLB's are still really good eating fish but not quite as high quality if that makes sense? But I could see how treating them poorly could lead to peoples dumb conclusions. Yes exactly, in fact you'd probably die if you tried to eat a steak from a cow that was treated in the way some of these people treat their fish 🤦♂️😂.
Faark was that uncle bennies rice 🤣🤣 my wife would have a stroke if I use long grain with Japanese/ korean food haha get into some Korean premade instant sticky rice bruf 😍👌. Great vid though

Bonito an undesirable? Never heard that one before, they're classed as good to excellent eating in most places around the world too (NOT to be confused with americas BONITA, which is just their name for our Mack Tuna, they have a species of regular bonito (Atlantic) as well and also highly rate them). Interesting putting them in this category but maybe you've heard different around Sydney? Most likely from people not taking care of them as like all tunas they are pretty fragile, would have to be something like that, as theres no way anyone that could actually prep a fish wouldn't love them! Still, sick vid and loving the series 🤙🏽🎣.
Honestly i was just as surprised as you that this fish made it on here. But yep it could be a NSW thing and it tends to be way more fishermen that don’t rate them opposed to Spearos. But there are definitely people who spear that wouldn’t touch them and have told me so. When i did a poll on instagram i was stunned to see the bonito more than twice. More for us i guess!

@@patrickherb4670 A lot of Japanese restaurants (at least here in the states) list on the menu "bonito" with the japanese name "katsuo" ... that's actually skipjack. In all likelihood you ate skipjack (which is also criminally underrated.) I guess in Australia you call them striped tuna or stripeys. If you truly eat bonito, the Japanese translation is "Hagatsuo" -- hope this is helpful or informative. They should not be selling bonito as tuna, or maguro, however.

How about you go shoot a blue throat wrasse and poach it. Or dry and salt the skin and make crispy skin blue throat. Most people bag this fish but it’s just because they are meat and veggie Aussies.
