  • Easy Fermented Sugar-free Sauerkraut in a jar is a simple and effortless way to prepare your own lacto-fermented full of probiotics cabbage at home.
    Make sure the jar, knive, your hands and cutting board are clean to ensure a proper fermentation of the cabbage.
    Ingredients
    800g cabbage
    16g salt 🧂 =1TBSP
    some dill ot thyme if you wish
    First, finely chop a cabbage.
    For 800 grams of chopped cabbage, add 1 Tbsp of salt. The calculation formula is 2% of the weight of the cabbage is salt.
    So, add 2 grams of salt to 100 grams of chopped cabbage.
    Sprinkle salt and some thyme and mix.
    Let it rest for 10 minutes. Cabbage should start to release liquid. Mix again and after 20 minutes in total it's ready for fermentation.
    Do not add water!
    Pack into jar(s), press with weights on top and cover loosely.
    Pour the liquid over the cabbage and make sure it is submerged in brine.
    Now, it's a waiting game.
    At 22 degrees Celsius, mine was ready after 3 days.
    You will get a tangy, crunchy sauerkraut that's very low in carbohydrates, perfect for diabetics, low carb and keto diets.
