  • As we complete our journey through the Mediterranean, we finally catch some fish! Although I'd intended to include the "cook" portion of the event, it wasn't very practical while on passage. So this is more of a "Catch & Clean" episode. Also, since posting this video, Anna (who, in this video, claims to be “not that smart”) became a published author!     That was a good tuna , and you may have done this but just in case here’s a tip , tuna exert a massive amount of energy during the fight till the very end and build up a ton of lactic acid in their muscles which will spoil the meat somewhat so to drain this away it’s one quick deep stab 1 inch behind the fin on each side which cuts the main artery and bleeds them out, do this as soon as you land it and hang up by the tail until it stops bleeding then straight on to ice (if you have ice)while you clean up and are getting organised to fillet the catch. This will make the meat taste sensational, and less mess during the filleting stage. Great episode really nice editing 👏

      Yep! Bleed, ice, and then fillet. The meat needs to chill ASAP and it will make filleting the fish so much easier as the meat will firm up. You can make a simple brine that doesn't use alot of ice by mixing a couple buckets of sea water with the ice and adding some regular table salt to the water also. When the fish is hot the meat is mushing and makes filleting the fish a mess. Also watch a youtube video on filleting tuna would really help. By the way great catch!       Love following your adventure. As said above, bleed, ice, then filet tuna. The colder the better when you filet them. Take the belly off as one piece and grill that wonderful piece (toro at sushi places). Then peel the skin off. Then remove the top and bottom loins, leaving the middle blood line attached to the bones. Keep water away from tuna. Scrape the meat with your blade, then wipe with paper towels. Water tends to lead to mushy fish :(.
      I enjoy the reality, without the music.

      Chris Jarvis ...why has no one mentioned the fact that Keith & SON were basicly chiming the water, and both of them on edge of swim platform...if you clean fish this way enough times...a SHARK will grab one or both of you...for Christ sake Keith...watch some shark fishing videos man... and you will SHIT your pants

    After watching all of the Z-crew videos I've sort of started taking for granted the work that goes into producing these films. This particular one reminded me of the editing that goes into them and I just wanted to say I appreciate what you do to bring forth such solid and polished presentations.     Definitely prefer the more natural sounds of this video. Makes me feel more like I'm there instead of like I'm watching a movie. Quite nice I think.

    This was an enjoyable, fun and all around feel-good episode! Each member of this family is important to the well-being of the whole and to the Zatara adventure. This was also another outstanding job of editing and the telling of a great story normally found in a good book. I'm hoping Anna decides to stay onboard.....her bright mind is learning far more important things now than any inputs she would receive at some college. Thank you Zatara family!!!!!!

    Boat & wind & rain sounds are an elixir to the ears. Some music sometimes is ok. Everything in moderation. .

    Renee/Keith:
    The modest amount of soundtrack for the opening and closing and transitional sequences is probably the perfect blend of "music". Don't forget to to buy plywood, 2x2s,long drywall screws,sealant,extra cheap plastic tarps,skill saw-jig saw,in case you lose a window or hatch opening crossing the Atlantic. Better to taken-in extra precautions...for those rare case scenarios. Happy Sailing with your family.

    Almost everyone doesn’t go to Harvard University so no problemo Anna! The one’s that do go probably don’t go sailing half way round the world like you have.

      Harvard isnt a place for smart kids. Harvard is where the ruling class with contacts send their kids not to get an education as so much as to build a network and create their own contacts.

    Enjoying the new longer episodes. Also the "Natural sounds", gives a nice indication of the atmosphere on passage. Keith's little one liners continue to amuse. "Can't live with em, can't kill em." LOL. Don't know what I'm going to do without my weekly dose of "Zatarra" when y'all sail off for weeks across the Atlantic!

    Thanks for sharing yourselves with me. Each episode takes this salty crusty shellback to my much younger days. The catamaran insights are diamonds whether your experience are good or bad. Plus the off the cuff comments and antics are so entertaining. What a life! Can't think of a better way to raise kids.

    FWIW add me to the list of people who love the sounds of the sea, the wind, and the boat moving.
    Hopefully on the passage we can get some of that and the sunrises and sunsets. I very much respect and admire the lives you are living and the memories you are making with your children...which are priceless.

    Seeing makes me tear up. I had to leave Spain a few months ago after being stuck there for way longer than we expected. But I grew to love the place and we just don't feel at home being stuck in Sweden anymore. Time to hunker down and get to working. Hopefully one day soon I can once again go out into the world where I know now, I belong :)

    Both catches are Bonita. Fun to catch and good bait. But if you were to eat them you should cut the gills open until the blood starts pumping out then drag them to extract all the blood from the fish. This will help with the fishy taste.

    Nice fish, next time try to cook soup from the head and even the skeleton... it is great, especially in cold weather and rough seas. All you need to add is some veggies as carrot, potatoes and onion;-) Keep going!

    Wow, great video. I like the natural sounds. You did a great job with a mixture of music and natural sounds. I agree with Robert Roye, that it makes me feel like I am there. I live vicariously through your adventures. I enjoy the natural sounds of a family in the background. I agree with your assessment of college education and was rolling on the floor with laughter at the comments about those who didn't get the joke about Harvard.     Most enjoyable sailing channel on UA-cam--- my favorite.
    Yes! Leave the music down while boat is moving - love hearing the sounds of the boat.
    Bonito are very oily fish... barely editable. Definitely not for sushi. With an almost full freezer - throw those sucka's back!

    I like the natural sounds. After a bit the music gets in the way and it all sounds the same. Besides it's hard to imagine what it would be like to be on the ocean if all we ever hear is music noise. Thanks for sharing your life with the forever land locked.

    Ken, next tuna you catch, after you secure the head. Cut the tail off, toss the fish back, let it drag while trying to swim and it will bleed ALL the blood out. So the meat, when filet the meat will be more light brown or gray. It stores better also. Love you guys!!!!!

    How come you guys never go crabbing .. I loved seeing you at the Chesapeake bay we went camping for 3 weeks every year when I was young at cherrystone park right on the Chesapeake I crabbed on dock clammed neck deep waters off my dad boats and once caught 23 pound sand shark off the Ms Jennifer party boat I was 8 years old.. I was born and raised on my Dads boat a fisherman’s daughter live in Staten Island Ny right off the beach my dad was a NYPD detective however he would totally loved to do what you guys are doing ( just not on a sail boat ) . My Dads 76 now and we own a vacation home on a private lake and since I’m a the on,y girl and after Hurricane Sandy living through that we now own a pontoon boat on the lake and jet ski we still fish but not into lake fish.. I admire you all its very much like my family was. Keith I say Dad to a tee.. my kids now 19 and 23 we went on our first CRUISE from Ny to Bermuda this past July it was a great time but it’s a city on the sea to much hustle and bustle and strangers.. however snorkeling swimming with dolphins pigs and turtles That beautiful water was truly amazing.. can you tell me the best place to resort explore the sea life that’s quiet we don’t scuba but want to just enjoy that sea life and the beaches water sports clear water.. would love to hear about Tate has she had her baby .. wishing you safe sailing and thank you for all the knowledgeable info you share , I hope to fill my bucket list and said for a week, I just way to scared as a female my guys and would kill us in and hr so I’d have to be a captain so a sail boat wouldn’t be for me lol I will settle for plane and a resort sail with a pro... bless your whole Crew and Mom your amazing

    Always look forward to Zatara Thursday.     This is by far my favorite sailing channel. I like the natural sounds of the distractions in the background, the silliness, and the suggestive humor. I hate how the average sailing person only sails on for 5 years. I know I could watch this for years to come.

    From the big city of Mohawk Tennessee....love the videos and totally envious. Life is an adventure for those who follow their wanderlust. What a great life learning tool.     It was definitely nice to hear the sounds of what's going on instead of music covering it up. Probably saves time editing too so you don't have to go find royalty free music to fit the mood of the video.
    I hope the kids appreciate the amazingness of their lives at sea.

    For tuna to not be chewy raw you have to cut it a certain way :) But raw fish is really delicious, you guys should get some nori leaves, wasabi rice vinegear and sushi rice on board. Deep freeze the fish for 48h to kill any possible germs if you are concerned the fish may be contaminated :)

    Keith - you are the man. I could go into detail about this; however, I will cut it short. I aspire to be like you. Love your attitude, dedication to your family, and love for being funny. Oh, you are a REAL man. Making repairs, doing things on your own (with help from the internet), and doing the best you can for family. I wish you nothing but blessings my man.     to fillet that tuna without cutting through all those bones, you should aim to quarter it, make an additional cut down the center of each side (along where those bones are), then cut from each side of the fillet as normal to meet the bones and that center cut. you will end up with four strips of boneless meat if you do it right. Also a good idea to hang it to bleed beforehand. the meat will be much tastier. love your videos guys!

    Great vid guys don’t forget to bleed out that tuna straight away while it’s still alive dragging it behind the boat is good but cut the blood line this makes the meat a lot more eatable and remember never wash fish with freshwater only use saltwater especially when you’re freezing it you guys rock !!!
