  • Recipe using desiccated coconut
    Ingredients
    - 1 cup desiccated coconut
    - ¼ cup hot water (not boiling water)
    - 2 cups all-purpose flour
    - 1 ¼ teaspoon salt (Salt to taste)
    - 2/3 cup water (Add extra 2-3 tablespoons if required)
    Method
    - Add desiccated coconut to a bowl. Then add ¼ cup warm water. Give it a good mix.
    - Add all-purpose flour to another bowl followed by salt. Mix well.
    - Add the coconut mixture to flour and give it a good mix.
    - Gradually add water to the flour mixture. You do not need to knead the dough.
    - Divide the dough into 8-10 portions.
    - Lightly roll up each portion into a rough ball.
    - Flatten the dough until stretched and round-shaped with your palm and fingertips. (You can also dust a rolling pin with little bit of flour and roll the dough out and use a cookie cutter to form round shape)
    - Cook on medium heat until the bottom starts to develop brown spots.
    - Flip the roti over and cook until the bottom starts to develop brown spots on the other side.
    - Repeat with the rest of the coconut roti.
    - Serve warm with lunu miris

    - Freshly grated coconut
    - 2 cups all-purpose flour
    - 1 ¼ teaspoon salt (Salt to taste)

    - Add freshly grated coconut, all-purpose flour to a bowl followed by salt. Mix well.
    - Gradually add water to the flour mixture. You do not need to knead the dough.
