im a coffee advocate and if u find coffee bitter it’s usually because it was roasted too quickly and partially burnt. slow roast coffee is usually more expensive and harder to find, but the difference is AMAZING. i used to prefer my coffee light roast with cream and now i actually like dark roasts and rarely put cream anymore. it still has a bold taste, but its very smooth and it doesnt have that weird after taste. i hope u can try some sometime :)
All coffee beans have bitter compounds - some are less bitter - like arabica beans - also French pressing and how the coffee is processed can reduce bitterness - but - all coffee is bitter to some degree - there may be multiple articles on the internet saying otherwise - but science disagrees

Your French is good especially when we know French is really hard to speak. Macarons are expensive so we don't get it often. And I'm not sure that is duck paté, I think it's foie gras.
