1 can of corn drained
1 can of cream corn
1 stick of melted butter
1 box jiffy corn muffin mix
8oz sour cream
Sprinkle of salt
Mix together
350 for 40 minutes
Topping:
Place Pie crust on top
Brush with egg wash
Back in the oven at 375 for 12-15 minutes

My recipe for this calls for 2 eggs & no top crust . Also, we add green onions to the mix, shredded cheese & sometimes finely diced jalapeno peppers. Love this!

Hi Kirsten, the holes/slits in the top of the crust is to let out the steam the would build up under the crust......

Side dish for Easter
This looks like a great Southern recipe. You guys have the best tasting food. My mom was from Oklahoma and every time she visited her folks she would come home with some amazing recipes.
This is one we would love.

I also add eggs to my corn souffle! Makes it light and fluffy! A spoon would have mixed that together better! Looks good!

We do one box jiffy cornbread mix and one box jiffy yellow cake mix. When almost done add sliced Swiss cheese to top. So good, slightly sweet and fluffy and moist as loaf. Will try yours. Looks yummy 😋
Do you need anymore butter because you are using 2 dry mixes? I'm asking because your way sound really yummy.

I mix it in a bowl. I add 2 eggs and 1 tsp corn starch. Pour in 13 x 9. But I put cheese on top ... 1 and half cup of grated gouda or cheddar. Delish!! Great to reheat.
I do cheesey corn casserole !!
2 cans of corn, drained .
1 can of cream corn
2 eggs
About a cup of milk
I take any pancake mix and put in about 3/4 cup .
Sharp cheddar cheese , I buy the larger bag of extra sharp cheese.
I put a couple larger handfuls in it.
Mix it all together and bake at 350 until it's nice and almost a dark brown.
20 mins before you take it out , add a light layer of cheddar on top !
I put it in a regular rectangle cake pan .
I've made that. It's very good.

Maybe a spatula for mixing. But that looks yummy!!
You mix in another bowl because you should coat the dish you bake in with butter or shortening or oil. If you mix in the greased baking dish the finished casserole will stick to the baking dish.
And you poke holes in the crust so that if the filling needs to expand out/over the baking dish it will go out onto the top crust and not down onto the bottom of the oven where it might smoke and burn every time you turn on your oven.
I have never tried the pie crust idea but I make this all the time to go along with taco Tues, try adding one egg and a 1/2 cup of cheddar cheese....I'll definitely have to try your pie crust on top tho!!!! ❤

I have been making a similar recipe for my family for 20 years now. It has to be on every holiday menu. The only difference in my recipe is I add 2 eggs and no pie crust. Now my five grandchildren have to have it now!!
