Awesome video as always Chris. Thanks for sharing. I think the Banh mi bread 🥖 different stall have it’s own way of making,but at the end they are all delicious. I like the Viet papaya salad too, very refreshing with lots of herbs. Vietnamese love their herbs a lot though. As for the baby chick I think it’s roasted/soy sauce quail, a small bird. Foam containers are frequently RECYCLED (washed) and dried in the sun.
One good thing about VN is that the food inspectors are busy (unlike China) and most of the food is good. REMEMBER - only buy from vendors that are crowded or have a queue waiting to get in (fresh food).

If you see any Snake fruit, try it, I swear it looks like a dry strawberry but when you peel it, it tastes like a sweet cantaloupe on the inside. Sugarcane with kumquat juice is what I normally get but if you see passion fruit juice ( nuoc chanh dây) it’s delightful. A bao? I just bite into it like a sandwich.
The Bao is all over Asia. It could be eaten hot or cold but preferably hot/warm. It's especially delicious when it's freshly made. It could be eaten for breakfast, lunch or dinner. Banh Mi sandwich is my favorite! Especially when the bread has been freshly made. 🤤🤤

There is no sauce but you can put a little bit saracha on top on it for the kick

Hey Chris, I think the 'red sauce' on the bun is a way of identifying the bun type, i.e. green for chicken, red for pork. I might be wrong but that's what the chinese do.
