The grey pipe is called poly butylene and is no longer used. As you pointed out there are crimp couplings that will transition from poly b to pex and once you have it into pex you cost of the 90’s and tees is much cheaper than. If you have a lot of poly b to replace buy yourself a crimp tool and do all your repairs with that as it will be cheaper and more reliable than shark bite. Shark bites are a great thing for a small job like this but don’t be re piping your house with them!

It will feel the same as when you put in the pex. It should not wiggle. It does take some strength to push it in, but you should be able to feel when it is in all the way.
