Linda has mentioned four cousins: Marie (first mentioned in Live & Let Fly), Jerry (Legends of the Mall), Ronnie (Loft in Bedslation), and Valerie. Valerie was first mentioned in Dream a Little Bob of Bob as having only one arm. Later, in the episode Die Card or Die Trying we see her along with her husband and her two sons on a postcard. Linda has mentioned two uncles. Uncle Donny (Pig Trouble in Little Tina) who served time in jail and Uncle Ricky (The Terminalator II: Terminals of Endearment) who had hip replacement surgery so he can only move in circles. Since none of these uncles or cousins was on the family tree Linda showed in Sauce Side Story, they're most likely from Al's family. Linda has also mentioned having a great uncle, Joe (Putts-giving). I suspect he's the guy sitting next to Burt at Joey & Danielle's wedding. Gayle has also mentioned a cousin Donnie who appeared in the episode Have Yourself a Maily Linda Christmas. Donnie is most likely a second cousin. Bob has also mentioned having an uncle Frank (Sauce Side Story) and cousin Vanessa who's in a cult (Uncle Teddy). I understand why you didn't mention any of these since we can't be sure how they fit in on the family tree, aside from their connection to Bob/Linda.
