Sammy... good parantha. Few more tips... 1. Methi cut fine 2. A little more oil while doing the atta. ( Make the oil Luke warm and then add) to make parantha more khasta 3. Atta Luke warm Pani mey goondo....like makki roti ka.
If you give a Rai and onions ka tadka in oil and fry Methi then add it to atta the Parathas become super soft and they taste so nice. Plus add malia to atta while kneading it will taste soft and yummy.

Methi should be washed thoroughly before cutting. Not in strainer but properly dipped in a utensil 2-3 times. Then remove from water and keep in strainer. Same fir any leafy vegetable. You get plenty of choppers to chop methi.

Methike parathe k liye gehu k aate k saath thoda besanka Aata bhi mix karke. Bichme thoda khadda gap karke usme saare masaale daalke thoda mohan garam karke bichame daalneka... Or pahalese dahi jisme thodi shakkar mix karke rakhi hui dahi bhi daalneka.. Methi jo baajume kaatake rakkhi hoti hai usme pahalese namak lagaake rakhaneka.
