    Plates, along with other serving dishes, are served on the left side of the guests. Plates are cleared from the table on the right side of the guests.

      Perla Heckner, there is not much to show for thus position. You need to know drinks and you have to be able to carry a loaded tray with drinks a long distance. It is a very good position to work on. Go for it.

      All the places I worked, I almost never had to worry about placing the tables. But we did place all the linens down, which I really didn't mind. It wasn't bad at all. :)

    When you walk away from the table, make sure your plates are on your left arm as you follow your Captain back to the kitchen. I saw the Captain carrying plates on his left but not everyone behind him did exactly the same. Uniformity is the key here.

    I really miss banquet serving... A LOT!
    I use to be a banquet server for Marriot hotel in Lincolnshire, IL. and I so miss it! We had an amazing team who worked together really well and we supported each other to get the job done, even when we were all painstakingly tired and nobody felt good at the end of a very long night.
    Your serving techniques are quite unique and different. When we served the guests, we started with the beverages like you do. But when the rooms were so huge and seemed so daunting, the banquet captains were so organized and we had to keep out eyes on them for them to signal when to depart the room to retrieve the trays of food in the banquet hall, or from the back room if we were in one of the big tents. We'd have our tray stations already pre-set up by our groups of tables, which were assigned to us by the banquet captain during the briefing before the party started. They would then go over the meal (similar to how you guys do). When we served the tables, one person would be responsible for serving the beverages, & meal, & clearing that table. And sometimes one person alone is responsible for 2 tables. But if there's 3 tables or more, we'd have 1 partner. So on to serving; we'd then serve the salad and we weren't as organized as you guys are, but we didn't continue on to the next table until the one we started serving was complete and we had to always communicate with our partners and keep an eye on the captain for when they signaled to go onto clear the tables, and then serve the next course of the meal till the whole meal was complete all way out to the desert.🍧 Since all the servers were so tight with the job, we often got standing ovations by the end of their meals. Some our guests from around the world and from all walks of life were really cool to acknowledged our hard and grueling work. It was very fun (and every party was different), but it was still very hard work at the same time.
    I can't do this work anymore though. I'm physically disabled. Sorry for the lengthy comment.

      It is a great comment, Dona! I am sorry to hear that you are not able to work this job any longer! I hope you are doing well! It is completely right, what you have done and this is how we did it in Las Vegas when we had to serve huge banquets ( sometimes up to 13 000 people for Comdex)
      In this video, I show the mirror service and it is done mostly in small, fancy weddings or other special occasions! There are many more ways to work a banquet!

    Each main course has a plate, a cover, and food. It weights about 3 lbs. A large oval tray holds 12 main courses. That would be 36 lbs. Kitchen to table distance is much further than most restaurants. How many waiters or waitress can carry 30+ lbs?

      i cant imagine them being forced to carry so many courses at once. I'd imagine that generally 3 plates would be maximum for fine dining

      In fine dining - yes, but in banquets you have to carry sometime even much more than that! Trust me, everyone can learn how to do it.

      @@TheWaitersAcademy When I was young, I can carry 30+ pounds by one hand off shoulder. Now, at 56, I can still do 25 lbs. Many young servers cannon even handle a tray properly nowadays.

    I think you must.. Clean the table. Even the bread plate only left is the water goblet and dessert fork or dessert spoon.?

      True, Dennies! Once the guests are done with the main course, we clean everything from the table including the salt and pepper shakers! We leave only the dessert silverware and the glasses that still have drinks on it! We have to also clean the crumbs from the table!

    I just wondering how to interrupt the guest while they’re talking & I have to tell them we have a wine menu on the table. I’m not a native speaker so I'm a bit nervous that I look too mean if I say something wrong.

      Very good question. Usually we don't interrupt guests while they are talking! If you need to tell something to the table, chose a guest who is not talking at this moment, or just approach the table and stand there for seconds in a position where the person that is talking in this moment can see you. If he keeps ignoring you, apply the first step.
      And if all this not working and you have to absolutely interupt them, you start with:
      -I am so sorry to interrupt you
      -I appologize
      ...or something like this.

      No, on Cruise there is no mirror service but in banquets we do it most of the time.

      @@TheWaitersAcademy The setup on the table, the round table for the same number of guests like in your vídeo, and you also bring heavy trays with 10 plates to the station, the uniform of the crew is also the same...but it's only the waiter and the assistant server, no mirror.

    Hi sir, plz I need to know what an on call banquet server means . Since it is on call that means you dont know how many hours u will work and if u will be able to rely only on the banquet job to make a living ? I have an offer of an on call position but they want me available as much as I can be . Also I have an other full time job . Iam just not getting what on call means.

      It means exactly that. They will call you when they need you. It depends on how busy they are to know how many hours you will work. May not be enough but may also be a lot. Tricky situation

    Too sudden and quick moves it is obvious, no elegance. Movement of "exit" should be directed into one point and not seperate if it is possible which in this case is.

      Good observations! Those people are all learning now the job! They do a lot of things wrong but the point here is to show how the system works.

    disagree...….serving from left bussing from right is the universal rules in dining...and look at your waitress how she is carrying plates...thumbs should not be inside the plate...nice try man!

Because I must agree with the other comments that in the u.s. the standard is to serve guests on the left and remove guests plates on the right. I have only done this in the United States and can not speak for outside the states proper service ideals.
