CHEESE FONDUE!! Authentic Family Recipe How Swiss People Make it!

  • Learn how to make an authentic Swiss Cheese Fondue with my family's recipe, from scratch! Since some people asked, NO this is not an instant fondue mix! Here in Switzerland, you can go into any cheese store and ask for a moité-moité fondue, and they will automatically just grate the cheese for you in a machine and just put it in a bag. This is the pure cheese, which is why I have to add all the other ingredients. The mix in here is half Gruyères, half Vacherin cheese which is the classic mix. In an instant fondue mix, you just basically heat up the bag as everything is already inside, sometimes even pre-melted - in short: not nearly as good as the real deal!
    Rest assured this is a very typical recipe, pretty much everyone I know in Switzerland makes some kind of a variation of this recipe. A similar recipe is even printed on the fondue bags when you buy it at a cheese store in Switzerland.
    Regarding wine, there is no reason to substitute. Alcohol evaporates at high temperatures, so if you're worried about that, just cook it a bit longer and let it boil before enjoying. There is no substituting for the taste of the white wine and really no reason to do so. Trust me, no child is going to get drunk on this fondue! Swiss kids eat fondue all the time with the wine in, as the alcohol evaporates at high temperatures.
    Ingredients for 2 people:
    400g cheese (classic is half Gruyere, half Vacherin cheese)
    1 clove garlic
    150ml white wine
    2 teaspoons corn starch
    1-2 teaspoons Kirsch (cherry) or Pear schnapps
    1 loaf of hearty country bread, cubed in bite-size pieces ("Ruchbrot" in Switzerland)
    dash of fresh nutmeg
    black pepper to taste
    Enjoy your authentic Swiss fondue!

    I need to report this to some random UN agency. You cant just make these mouth watering videos flooded with Swiss ingredients while your audience is languishing in some tropical country. Great video and love fondue!

    I've been eating what I thought was swiss cheese for years but now that you informed me there's no such thing as Swiss cheese I'm freaking out and trying to figure out what I have been eating all this time.

    Love, love, love fondue! For those of us who don't have access to the traditional cheeses Vacherin and Gruyere be careful if you use American style "Swiss" cheese as it will sometimes not melt and the whey separates when added to the wine and it gets gloppy.

    I think Gruyère cheese is the easiest to find, at least where I live, which is fine because it is so good! I love the cooking and travel videos you make, and this channel in general!

    I use the same recipe! Except I mix everything from the very beginning. And the "moitié-moitié" fondue is my whole time favourite (gruyère et vacherin).

      Eternal Solitude My point is this: all good cheese, or even half reasonable cheese, in the USA, is not made IN the USA, and is bought in. Not that it matters that much, but if you love fondue and America falls out with the world and enforces a trade embargo, yanks are gonna be without *real* cheese.

    Der Rhinelander restaurant in Portland (Oregon) had cheese fondue as their appetizer and it was to die for. I knew it had wine in it, but I never thought of Schnapps I may have to get brave and try making me some of this. I can get Emmantaller and Gruyere cheese here. The restaurant served dark rye bread for dipping... I'm hungry!

    Yum, that looks delicious. I've read that some people add a little triangle of Laughing Cow cheese when using multiple types of cheeses when making the fondue. Apparently it helps the cheeses melt together evenly and not separate.

    im swiss from fribourg/freiburg the most popular fondue and traditional in the swiss country its fribourg fondue = vacherin and gruyere +white wine
    an other popular fondue in my country its juste vacherin fondue =vacherin melted with water

    I know you said you like pears with cheese, I live in the USA and an idea for you, I love this as a light snack, pears cut in half, one small teaspoon of mayonnaise Into the pear and add grated cheese on top, a good cheddar is best-hope you try and enjoy & thanks for your fondue recipe!

    I have just had one of the best ideas on the bloody planet..I wonder how this cheese sauce would go with pasta aka Macaroni or any tube pasta..and then in true Italian form toasted ground bread crumbs instead of cheese a peasant topping form Italy..A Macdue mmmm :-) think I'll do this tomorrow

    Mmmmmm Sounds good!!! The pear Schnaps sounds good with it or even peach Schnaps. I don't like the taste of wine in food so I would maybe replace that part of it with milk.

    I agree, you are right!! I live in the German part of Switzerland and as a foreign I perfectly know that Swiss people don't like to speak German at all. (Some of them not even if you speak in German with them) And "perhaps" it may be not important to speak their dialect but understand it is really important 'cause German is absolutely not enough!

    It's probably a "Chäsbrägl" for which they often use Raclette cheese, as it melts very easily.

    Not sure if you'll reply or even see this... i've lived in Austria for almost 28 years now and had a few Swiss gfs. Gotta say your English accent is almost non-discernable! Are you French or German Swiss??? My Austrian wife is 1/4 Swiss from Hinterzeller region (sort of between Bern and Luzern) and my father-in-law finally shared the family secret recipe with me... we're doing this tonight for Silvester!!! It's more about the type of cheese mix rather than the technique... the technique is the same everywhere, i think. Anyway, trying to explain this to my children... and while our family tradition is more the French Swiss tradition, I can't imagine it's that different from the German Swiss one.     Yum!! Thank you for sharing your recipe :-) When I lived near Montreux we also had a meat fondue...hot oil in the pot, and various dipping sauces. Of course, I liked the cheese better :-)
