  • Tomato sauce
    4 cloves garlic, sliced
    2 Tbsp fresh basil, chiffonade
    1 28 oz can whole tomatoes, crushed with your hands
    salt and pepper
    olive oil
    Italian sausage
    1 tsp finely chopped fresh rosemary
    1 Tbsp finely chopped parsley
    1 tsp finely chopped fresh thyme
    1 tsp red pepper flakes
    1 tsp dried oregano
    1 tsp ground fennel
    1 tsp garlic powder
    1 tsp paprika
    1/2 tsp onion powder
    2 Tbsp olive oil
    1 tsp salt
    1 lb ground pork
    Preheat oven to 500f
    Other ingredients
    3 cups grated low moisture mozzarella cheese
    pizza dough
    pepperoni
    Bring a pan to medium high heat. Add your olive oil and saute your garlic until lightly brown, about 1-2 minutes. Then add your crushed tomatoes, basil, salt and pepper. Turn the heat to low and let simmer for 10 minutes.
    In a medium bowl, add your parsley, thyme, rosemary, oregano, red pepper flakes, fennel, all your spices and olive oil Mix well to form a paste. Then add your ground pork and mix well using your hands. Set aside in the fridge.
    To a cast iron skillet, add a generous drizzle of olive oil and your pizza dough. Spread your pizza dough edge to edge. Next add tomato sauce and mozzarella cheese (make sure to sprinkle some around the edge of the pan). Then add pepperoni and little pieces of your Italian sausage mixture. Tear some fresh basil over the top. Place in your preheated oven and cook for 12-17 minutes or until everything is brown and caramelized.
    Slice and enjoy!
