    dear ninong (naki ninong ako eh🤨 halos anak na kita sa edad mo, hahha) hanga ako sa iyo nak, i am a school counselor ng college dito sa sbma (lagot gamit ko acct ng work ko!) stress reliever kita eh sa tawa after a longgg day sa work hirap ng mental health practitioner eh, hahaha pero I see myself soon na the chef counselor ☺😅 when i retire sa work hahha. matagal ka na naming pinapanood ng mga boys ko at papa namin, enjoy kami and proud kami sa milestone mo, congrats and hope to yeah, collab with you hahahahha. (mam ludi here❤) me gift ako na mabasa ang personality ng isang tao, maybe kasi of my profession. and i see you as a very smart, higly intellectual pero down to earth and big ang heart. congrats we keep you in our prayers kasi nagagamit ka ng lord na mag pasaya ng mga tao and matuto.

    Super lupit ng content pero ito nagpabilib sakin simple lang. @36:02 36:02 reminding sila kay ninong na mag hinay hinay simpleng gesture of how truly they care. Kahit pa biro pero tottoo. Sarap ng tropahan na ganyan.

    Nag work ako sa isang sikat na chocolate factory sa dubai.
    From bean to bar. Simula nun nagsulputan na ang mga bean-to-bar factories.
    Tip lang po pag immicrowave 5-10 secs lang then mix then ulit ulitin hanggang malusaw kasi masusunog ang butter.
    Pag hindi rin tempered ang coverture chocolate, white-ish yung ichura dahil sa butter, grainy, walang crisp
    Sa pag tempered naman. Recommended ang marble table sa pag manual tempering kasi mas mapapadali ang pag baba ng temperature.
    Mamali ka lang ng pag tempered masasayang ang effort mo 😅
    Ang pag tikim din ng real dark chocolate ay may flavour notes. Parang wine.

    best explanation of chocolate tempering I've ever seen. well explained. 1've been tempering chocolates for the past 8 yrs and ninong ry explained it so well from the different kinds of chocolate to the proper way of tempering. galing!!! for the tahini po, you can also make it from scratch. 1 cup sesame seed, 3 TBSP oil. toast the sesame seeds, then grind then add the oil (canola, vegetable or hazel nut oil).

    Kelan lang ako nanuod ng mga video mo ninong ry, kasi sa isip ko dati ang haba ng video katamad panuorin. Ngayon magmula umaga pagka hatid ko sa anak ko sa school video mo pinapanuod ko maghapon na yun. Madalas uuwi partner ko sa gabi sabi nia ninong ry nanaman😅🤣. Magmula nung mejo nawalan ako ng gana manuod sa kpop. Eto na kapalit. Nakaka aliw yung kulitan nio. Yun yung pinaka nagustuhan ko

      ganyan din ako dati. pag nakita ko lampas 10mins video auto pass. pero meron mga youtuber na kahit ilang minutes o oras yung videos nila hindi ka mauumay manuod. isa si ninong ry sa mga yun. isa pa na pinapanuod ko na mahaba videos si tekking101. mga videos niya tungkol sa anime na one piece. try niyo entertaining din

    Hi Ninong! it’s true na it takes a lot of patience talaga kapag nagchochocolate ka. Kasi matagal na process sya. Hindi sya pwedeng basta-basta madaliin.
    I highly recommend po talaga na tunawin yung couverture chocolate using baine-marie/double boiler and not sa microwave. kasi minsan may tendency na masunog yung chocolate and mahirap macontrol yung temp kahit pa ilang seconds lang. And like sa 2nd attempt mo, mas mabilis talaga sya matunaw kesa sa microwave. Also, mas okay na 43° yung temp ng couverture chocolate kapag minelt and not higher kasi mas magiging matagal yung process ng pagtemper ng chocolate. Siguro max na yung 45°. also, kahit mejo pain in the ass ‘to pero okay din na ichop pa ng smaller pieces yung chocolate para di ka mahirapan na tunawin yung chunks while tempering.
    So sa work po namin, usually ginagawa ko is imelt ang choco to 43° down to 28° lang. mahirap kapag lower na jan lalo na marami pang naiwang chunks ng choco na hindi natunaw. then warm up mo ulit to 31°C since yan yung working temp ng choco. 32° is mejo okay pa. you can still get away with it. pero pag nag33° na yan mejo mahirap na, mejo magmemelt na ng konti yung tempered choco sa kamay mo. lalo kapag warm ang kamay mo.
    Mejo mahirap po talaga magchocolate😅 very tricky and need mo talaga ng mahabang pasensya. Pero once na nasanay ka, masaya magchocolate lalo kapag gumagawa ka na ng chocolate decorations and chocolate showpieces. 😊

    Going back sa mga unang taon with ninong Ry, ang fulfilling lang makita yung Wedding ring nila ni Ninang sa Slowmo at yung fact na may kinakapatid na kaming lahat. Sobrang sarap sa feeling na napanuod namin ang journey mo ninong at sobrang saya namin na always improving ang content mo. Dito ko napapatunayan sa sarili ko na there's no such thing as stagnant knowledge. Kahit gaano ka kagaling before, may matututunan at matututunan ka parin. Love you always ninong and more power!

It saddens me din po pero it doesn't and did not upset chef nouel naman po he is proud that he's innovation has spread and that's he's goal. It doesn't matter for him, as long as people are happy then we can credit the work for our own.

    34:13 Ninong, kaya po green na green yung pistachio paste/butter na ginagamit nila ay dahil pinili nang maayos halos isa isa yung pistachios yung pinakamatingkad ang kulay at ang pinakaimportanteng ginawa ay tinanggal yung manipis na balat na kulay brown na parang parchment na nakabalot sa mismong pistachio seeds.
    Tama po na gumamit kayo ng tahini kasi it adds nuttiness sa mismong paste na nasa loob.

    Depends sa chocolate yan @ninong Ry sa dark choco 45 degrees, milk choco or white choco 40 degrees. Cooldown and Reach 28 degrees bago ilatag, isa pa kaya tinetemper ang chocolate kasi kahit hindi mo i lagay sa freezer or chiller yung chocolate kusang titigas yung chocolate sa room temp. Kasi once na yung chocolate mo pwinersa mo patigasin, tapos nilagay mo sa room temp panget yung kakalabasan madaling malusaw.

    Hello Ninong! Ung pistachio paste/cream, if you want ng green, dapat matanggal ung skin by blanching and manually removing the skin.
    Ung kataifi pastry dough, pede i-DIY kaso matrabaho but worth it na din especially pag walang mahanap sa store, made of flour, cornstarch, water, oil, sugar (meron na available videos).
    Thank you for teaching about tempering. Muntik nako bumili ng Callebaut, buti I cancelled, mahal pa naman hehe. For next time nlng.

    Parang simple lang pero sobrang hirap nyan matrabaho tlaga sya . Usually 35-29 lang gnagwa ko . Pag bumaba na sa 29 iaangat ko sya ulit s 35 or 34 bago ako mag Mold ng panibagong chocolate

    Omg Ninong Ry maraming salamat po sa pag turo kung pano mag temper sinundan kopo lahat ng pinag sasabi niyo but failed sa first try second try I did it... Again super happy po ako na alam Kona mag temper pero talaga Maraming salamat sayu.

    ninong ry, yan ata ginagamit ko sa dessert ng greek yung parang "pancit".. kataifi ata tawag nila dyan.. napaka versatile for me nyan kasi parang pastry sheets lang din.. more on pistachio saka walnut ginagamit ko dyan.. thanks sa info bout tempering sa choc nong!
