I don’t get the whole concept of Payload as a CMS. Isn’t the whole point of a CMS is you don’t have to build a backend yourself? Contentful, Strapi, Sanity all have user interfaces to act as a backend without writing code so you can only focus on your front end. With payload, you have to do all the stuff yourself so what is the use case of it?
Payload also provides a full backend
