  • In this episode of How to Drink, I’m showing you how you can make a simple syrup like Orgeat in your own home. I recommend making your own syrup because it is quick, easy, and a lot cheaper then going out and buying some!
    Ingredients:
    1 pound almonds
    Water to cover
    Blend/Pulverize
    Strain/juice
    Add equal measure of sugar
    Half a teaspoon of orange flower water
    heat on stove till emulsified.

    I'm a little late to the party but I have a few tips for anyone that might stumble across this.
    Soak your almonds in a brine of 1 teaspoon salt, 1 teaspoon lemon juice (fresh) and 250 ml water for 200 grams of almonds overnight before making.
    The salt softens the almonds and makes it easier to draw out the liquid from the almonds, making you end up with more almond milk.
    The lemon juice destroys a chemical called Tannin which tastes bitter making you end up with a sweeter and more flavourful end product.

      @@higochumbo8932 Sugar is a natural preservative. If you reduce it you will first of all now create the right profile but you will also create something that spoils faster. If you replace the sugar with a non nutritive sweetener like steava monk fruit or artificial sweetener again you will not have enough sugar to prevent spoilage.

      Hi Greg, I love your show and I'm a big fan, have watched every episode like 100 times!!!!! I really like your idea of using the juicer but have a couple questions.
      1. Do you need the everclear, would it be ok without?
      2. Exactly how long does it last/would it last without?

      I'd never heard of Everclear before watching this video, but I typically use Vodka as a preserving agent for my syrups, so I imagine that would work for Orgeat as well. From what I've been told that little bit of alcohol from the vodka will make it last 3 months in the fridge instead of 1 month.

      Not flaming but a hell of a lot simpler to do what my wife did: go buy a bottle for a few bucks.
      Also did you call it a “spirit”? No booze in it.
      I just made something with Genever , Orgeat and ginger ale.
      Could be better imo.

    A little thing, since Orange flower water is made from a cold steam extracting process to preserve its fresh aromatic profile, I'd only dump it in after chilling the syrup. Also, boiling the syrup it's not the best. Try 55C but mix the almonds with warm water. I loved the idea of using a juicer to speed up the filtering process

    Was scared to use my juicer on almonds so I used your video to make grenadine and a different one for Orgeat. The homemade syrups change the game. I'll never use commercial grenadine, falernum or Orgeat ever again.

      There’s a very small number of commercial brands I like, mainly Small Hand Foods. I used her syrups as a kind of “good example” when I first starting making my own, because if you’ve never had great orgeat, how do you know what it’s supposed to taste like?

    From what I understand, traditional orgeat uses bitter almonds, as opposed to the more commonly available sweet almond. Bitter almonds contain more cyanotic compounds, which creates that distinct flavor associated with almond extract. In fact, many of the orgeat recipes I've seen call for almond extract since most people will only have access to sweet almonds.
    That being said-did you use bitter almonds? If not, did you find the flavor was very similar to what an orgeat should taste like or would you recommend supplementing this recipe with almond extract?
    As an aside, your videos are great and have really given my cocktail game a huge step up so keep up the good work!

    Love your show! I just wonder how you store your syrups and grenadine and the like? Do you keep them refrigerated or in room temperature?

      In the fridge. They keep for a long time like that. If the syrup is made inverse (2 parts sugar to 1 parts liquid) it can be stored at room temperature, but I feel better about them being in the fridge all the same.

    If you are looking for an interesting cocktail to make with Orgeat, we do a Buried Hatchet at Public House in Amarillo,Tx.
    Recipe
    1.5 oz Rye Whiskey
    1 oz Lemon Juice
    1 oz Orgeat
    .5 oz Angustora Bitters
    Shake with an egg white
    Serve in a coupe with a torched rosemary.

      I think I got my orange flower water at a grocery store in nyc, but it's readily available online.
      The .25 oz. ever clear has no real effect I think... I keep doing it because I have no reason not to. In the fridge I find that Orgeat will last quite a long time, months.

    Where do you get the glass bottles for your homemade syrups?

      I found those specific ones at my local grocery store collecting dust at the back of a shelf. They'd probably been priced in the 80's and never changed, I snapped them up for $1.25 a bottle. They're a very common design though, you can easily find them on Amazon.

      For my syrups I do. I keep them in the fridge, and in my experience it lasts for months without issue.
      Syrups that contain fruit juices or fruit parts (citrus zest for example) can grow mold in my experience, but by making them inverse (2 parts sugar to 1 part water) you should be able to mitigate that as well.

      I don't, and I probably should have just cut that out of the episode. It's something I was taught once and I still do it, but there's no way the final ABV is anywhere high enough to be functioning as a preservative.

      I don't think that would taste like Orgeat. I know people have gotten some results using store bought almond milk, but I'm not sure how. They may be adding almond extract to it. The Store milk is really stripped down to get the almond flavor out of it.

      I get asked this a lot. I've read people who say it does, I'm not sure I agree. The results of my blended and spun almonds do not taste like unsweetened almond milk to me, but I'd be interested in the results of your efforts. The traditional method of doing this just involves a lot more soaking time and the use of either cheese cloth or something called, I kid you not, a nut bag.

    Would love to make my own Orgeat, I don't have an ACME JUICERator though, any suggestions on what I can use for that step?

      Using a juicer is something I figured out to speed up the process. There's a lot of recipes out there though, here's one from Imbibe magazine: imbibemagazine.com/homemade-orgeat-recipe/
      The technique they advise with the cheesecloth is the more standard approach, you can modify the ratios to suit your taste.
      You can also buy orgeat. I like Small Hand Foods: smallhandfoods.com/store/syrups/orgeat

      How To Drink Fee's has a lot of orange flavor and not nearly as much almond as homemade orgeat. I've made Mai Tai's side by side and in my opinion Fee's has better flavor, mouth feel and makes the drink have a more appealing color. It's also nice that it's really cheap. My tastes are a little sweeter than what yours seem to be but I'd give Fee's a try.

      Orange flower water isn’t really something that can be substituted, it’s pretty unique. You could skip it, and the orgeat will still be plenty almondy, but it will lack some complexity and lightness.

      I know some people do. I've never tried it, but I will say, the almond "juice" is way more almondy tasting than almond milk

      freeze it and it basically will last forever. put it in the fridge and it will last about 4 weeks. don't put it in the fridge and you're probably looking at 2 or 3 weeks. the more sugar you put in it the longer it will keep. these are just based on my personal experience. there is bacteria everywhere. buyer beware. don't blame me if this doesnt' work out for you.

      Considering that the purpose of using orgeat over simple syrup is the almond flavor, it's not perfectly replacable. But thinking for a bit, pistachio is probably the closest you'll come for flavor to almonds. Maybe try it with pistachios instead if you aren't allergic to them.

      I've never tried that route. I know some recipes do use extract though so I don't think it's completely out of the question.

      There certainly are wholesalers here that sell it! Hard to come by, though. Ask a cocktail bar where they get their orgeat syrup from or at least the brand, it's doable.

      Some do, I’ve never tried it. I will say that the almond milk I make here doesn’t taste anything like store bought.

    Serious question. You said in the video you basically made almond milk as one step. Could I theoretically use premade almond milk to make orgeat. I guess it wouldn't be as good and I could just buy finished orgeat, but I didn't find it where I usually buy it

      The almond to water ratio is really close, so you'd end up with a very thick, concentrated almond milk. I'd say it will not work.

    is your orgeat oily? especially after mixing it as a cocktail. I've tried making almond syrup through another method before (including toasting the almonds), and it ended up kinda oily, which made the drink look quite gross after mixing it with soda water.

      I'm not sure I'd say it's "oily" but it is fatty. A big portion of what winds up in the bottle is the monounsaturated fat that's prominent in almonds (all nuts really) so it could be that you're seeing that. Some people, and most commercial manufacturers, strain or filter this out, but I haven't had any reason to so far. It doesn't go bad fast, or taste "off" and it makes my favorite Mai Tai. The Fats can separate in the fridge, i just shake it up a bit before using.

    Hello, I am rather late to the party here but I have been toying with making orgeat and put off by those tedious recipes so your method really appeals! I actually have a juice and wanted to ask if it works in the same away - mine has a great big spinning grater/fine mesh filter in the middle that you chute your fruit/whatever you're juicing onto. Does yours work in the same way?

      Ben Cummins yup. I was looking at it and thought "this is pretty close to a centrifuge, I bet I can separate liquids from almonds wayyyy better with this than with cheese cloth"
      It did, and it cut way down on the need for soak time too in my opinion.

      It's such a great thing to do; I used to make ginger syrup that painful way with cheesecloth, now it goes in the juicer and takes no time. I never even thought of putting nuts through a juicer; making up the paste/puree in the blender is genius!
      I find myself wondering 2 things - have you tried this with other nut varieties, and have you tried it out by blending the almonds with just-boiled water to see if it gives better results?

    I would just use unsweetened unflavored almond milk. I have to imagine any loss in quality from mass manufacturing would be more than made up for from the industrial extraction.

      Why wouldn't you? Because it's not gonna taste anything like Orgeat that's why. When you crave a real hamburger do you head to McDonalds ?

      The difference is the ratios of almonds to water they use. Store bought almond milk is extremely watered down compared to what he made here, which he says is more of an almond paste consistency. That has a huge impact on the taste.

      I thought the same thing and did some experimenting. If you go this route you absolutely need to add almond extract or the flavour will be all wrong. The best recipe I found is from Blossomtostem, some kind of blog.

      CanCamelsCanCan I know that there are some recipes out there that start with store bought almond milk, but I haven't tried them. For me, the almond+water purée tastes way more almondy than almond milk (which I think is mostly formulated to taste like milk) so I don't know how good they come out. But some swear by them.

    I use to wonder why almond was in tiki drinks because it never came to mind as "tropical" until i lived in Puerto Rico. Almond trees everywhere, evil evil almond trees. Oh, why evil. Because they have a nasty fruit that rots when they fall off but more importantly they shot out like a bullet when you cut the grass and they are hard as hell to rake up. The metal shutters meant for hurricane protection saved many a window.

      Wieppp it's a syrup, so the primary ingredient is sugar. I can weigh it when I get home for grams.

      I go back and forth on this one. I should do a side by side with blanched vs non blanched almonds. I did a batch the other night that used a mix of both (dumb, but it’s what I had)
