Hawaiian Macaroni Salad
INGREDIENTS
2 cups whole milk
1 cup mayonnaise
1 cup salad dressing
1 tablespoon brown sugar
2 teaspoons pepper
½ teaspoon table salt, plus salt for cooking pasta
1 pound elbow macaroni
½ cup cider vinegar
4 scallions, sliced thin
1 large carrot, peeled and grated
1 celery rib, chopped fine
INSTRUCTIONS
Whisk milk, mayonnaise, sugar, pepper, and ½ teaspoon salt together in bowl. Reserve and refrigerate 1 cup dressing for finishing salad. Set both aside.
Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and pasta and cook until very soft, about 15 minutes. Drain pasta in colander and shake to remove excess water. Transfer pasta to large bowl, add vinegar, and toss until vinegar is absorbed. Let pasta cool for 10 minutes.
Stir remaining dressing (larger portion) into pasta mixture until combined. Stir in scallions, carrot, and celery until combined. Cover and refrigerate until fully chilled, about 1 hour. Stir in reserved 1 cup dressing. Season with salt and pepper to taste. Serve.

@@jameskitchak7996 nope. I don't think anyone adds milk and rarely celery. Most takeout places have globs of mayonnaise. Ive been here for decades. Never saw a mac salad like that. And karaage chicken is a Japanese style. I didn't think it was Hawaiian. What an odd episode.

I don't think I've ever had Mac salad with milk, vinegar or green onion. Our family uses finely shredded carrot, white onion, tuna, mayo, black and white pepper. Tuna mac is the b usual fare here in hawaii.

Japanese karaage is one of my all-time favorite chicken preparations. Simple and delicious. And Mac salad is indeed a critical component of a perfect Hawaiian plate lunch. Excellent episode. 👍

I was born and raised in Hawaii and Hawaiian style food has gained popularity all over the world and it's easy to make at home, you could easily find authentic Hawaiian style recipes here in UA-cam and some of the ingredients in Amazon.
My favorite fried chicken is the crispy ginger chicken and mochiko chicken, dipping sauce isn't necessary if the chicken is marinaded.
That salad they made is not even close to mac salad in Hawaii
I'm glad Hawaiian style food is catching on on the mainland, except where I live now it's only poke. I'll see your ginger chicken and raise you a chicken katsu and a chicken luau. 😋I'm hoping someday I'll figure out how to make katsu and mochiko chicken in an air fryer.

@@jasonbabila6006 I actually found an air fryer cookbook with a recipe for chicken katsu! I did kind of a book Jun Ken Po (opening to a random page) to see if I might want to buy it, and there was my old friend. Into my shopping cart it went.🥰
A better way to make the mac salad is to add the milk to the warm noodles first, then add the mayo a few minutes later.
Also, another classic way to make local style fried chicken is to fry the chicken naked or with just a dusting of cornstarch or rice flour, usually bone-in thighs cooked in a cast iron pan.

The chicken is more of a take on karrage chicken which while popular in Hawaii, isnt really “Hawaiian style” fried chicken, but It works. What doesn’t work is their take on our local Mac salad. I don’t know of any local or locally own establishment that prepares it that way (except for the carrots). Regardless, I thoroughly appreciate their effort to focus on Hawaii for this one. Love what these guys do. Aloha!
I'm not local, but I remember someone telling me the Mac salad was supposed to have grated onion for flavor. I also never saw a Mac salad served with celery on the two times I've been to Oahu.
Hawaiian food is Asian inspired
Hawaiin fried chicken with pineapple katsu sauce is transcendant but the mac salad, rice with a sweet soy glaze, roasted pork, etc is what makes hawaii such a wonderful collective of cultures.
In Hawaii they eat potato-mac salad which is a combination of potato salad and macaroni salad. It's delicious!

That’s the first Hawaiian Macaroni I learned to make. So delicious. I haven’t made it since my husband died 11 years ago, it was his favorite.

We made both of these recipes about a month ago from the magazine. They were delightful! Both were bang-on renditions of katakuriko chicken and macaroni salad and brought me memories back to the karaage and macaroni/potato salads in the delis in Tokyo department stores during our trips to see family members! I do think that what makes this dish Hawaiian as opposed to pure Japanese is the replacement of sake with brown sugar, which isn't a typical ingredient in Japanese karaage but gives the chicken a distinct, darker flavor than the Japanese version. The dipping sauce is also a modification, as I'm pretty sure that yuzu wasn't readily available in Hawaii at the time this recipe was created around 100 years ago due to how perishable it was.
I absolutely love this show. You not learn how to cook so many different dishes, you learn about the best products on the market. I love how everyone on the show seems like they are all the best of friends.
I've prepared this Hawaiian-Style Fried Chicken several times for several different people. Everyone loves it. And, it makes great leftovers. I keep a bottle of the dipping sauce in the pantry which goes well with many foods.

It's always made with milk and vinegar. The sugar part was different as most use Hawaiian sugar or regular C&H.

the secret is grating a sweet onion into the dressing and fine kosher salt... mayonnaise has to be best foods/hellmans brand... these three things give it that special Hawaii flavor

Great video. Just a quick FYI on the potato chip tasting. If the reduced fat version is 40% less fat than the regular version, you can actually eat about 67% more of the reduced fat chips and have consumed the same amount of fat as the regular version, not 40% more.
For example, imagine the regular chips are 1 gram of fat per 9 chips. The reduced fat version would be 0.6 grams of fat per 9 chips (40% less). If you scaled this ratio up, that's the same as 1 gram of fat per 15 chips. So you'd be able to eat 15 chips of the reduced fat version compared to 9 chips of the regular version to get the same amount of fat. The 6 extra chips of the reduced fat version compared to the 9 chips of the original version is 2/3 more chips or about 67% more chips that you can eat.

From what I read from Hawaiians on this salad, both chopped boiled eggs AND diced cooked potatoes are added with the vegetables to make it authentic.
In 808, there has to be, at least, 1000 different fried chicken recipes & 2500 recipes for Mac salad. It all depends on your preference....

Love the effort in putting together this meal from Hawaii. First off the metal boxes that they used to put their lunches in was call a "bento box." Secondly, by using mochiko flour in the your fried chicken recipe is called "mochiko chicken." Karage chicken consists of a marinaded chicken in a basic sweetened soy sauce and then drenched in a corn or potato starch and then deep fried twice. As for the mac salad, gotta cut back on the ingredients. Love to send u my mom's recipes.

I don’t fry any foods at home; however, the Hawaiian Mac salad is perfect. As a kid I lived on the rocky beach of Huula. Loved the Mac salad even then. I forgot to add the vinegar. Makes a total difference. Thank you.
When they were making the dressing for the macaroni salad I thought, "where's the acid?" But when she added the vinegar to the pasta I understood. With that much milk in the dressing the vinegar would have curdled it.

Dis da original recipe from da 1930s. Of course you weren't raised on dis cause every Nationality adds, revises to dere own taste. Japanese add mashed potato to make it thicker. On da Big Island, my ohana grew up wit tuna mixed in. My Mom, Chinese Hawaiian, put chopped boiled egg. My Dad's, Portagee, side put spam. I grew up near da original L&L and even dere's different. I leave out da milk and put crab and thinky dliced cucumbers. Gotta use Best Food mayo, called Hellman's on da East Coast. Born, raised in Hawaii also.

So I guess I've been making Hawaiian mac salad most of my life! I pour the vinegar into the hot drained macaroni and then pour that out onto a half sheet pan to get it to cool down faster.

tom save time just put the hot noodles in a colander and run cold water over them from the sink. takes 2 mins and all noodles are cool

nope just good ol best foods mayonnaise. we don't add sugar either. we just grate one of the sweet onions and add garlic powder, grated carrots, fine kosher salt and black pepper
I used this recipe for macaroni salad and it had a really strong vinegar flavor. Didn't taste at all like the delicious ones I've had at multiple Hawaiian barbecue restaurants.
Add one can of drained, crushed pineapple (in juice, not syrup) to the mac salad for a bit of tropical sweetness. So good!
I am going to try this.. the recipe looks great, but the crushed canned drained pineapple really sounds like it would bring brightness to it..

I have to be honest, my mouth started watering when I saw and HEARD that macaroni salad!!! Gosh!!! I could handle that especially with that chicken!
There should be a way to determine the approximate thickness of the plastic wrap by measuring the radii where it begins and ends on the roll, factoring in the known length of the entire rolled up sheet (which you might have to derive from the measured width and the total area printed on the box). It'd be geometry with a touch of calculus. I'm a little too rusty to try and figure it out myself, but the pieces are there.
many years ago, (decades) I would buy plastic wrap and it gave the gauge in mils.

When I was a kid my dad made this fried chicken - it was one of our favorite dinners. It seemed to me he used club soda rather than water in the marinade and he used corn starch rather than potato starch. Hey, ATK, any thoughts on why to choose one over the other? Thanks!
Soda water probably evaporates more easily, leaving a crunchier chicken. Alcoholic beverages can also achieve that effect. On the corn starch, though, no idea.
I think potato starch is lighter/finer in texture than cornstarch so it produces a lighter, crispier coating. If you can find sweet potato starch instead of regular potato starch the coating is even crispier.
My mom also used cornstarch or mochiko probably because potato starch was hard to find in the markets.
He explained in the video that corn starch takes longer to brown than potato starch does. And since the chicken pieces were small and thin, he chose potato starch so that it would brown in the same amount of time it took the chicken inside to cook through. 3:50
I think corn starch is better and it makes it crispier

Perfect macaroni salad: dissolve 1 cup sugar in 1 cup Heinz distilled vinagar in a suace pan, bring to a simmer . Boil 1lb elbow pasta 10-12 minutes. Dice 1 red bell pepper, I stalk celery. Combine pasta, vegetables and hot sugar/vinagar and refrigerate overnight. Then add 1 cup mayonnaise after fully chilled. Result is the best NY style macaroni salad.
Is it good ? Ive found after u let it cool u still have to add extra mayo later
@@alishadawn6636 you don't add the mayonnaise until it is completely cooled. The pasta will have absorbed the sugar/vinagar brine and then just be coated with the mayo. It won't soak in.

Being from the Midwest (Minnesota) I've tasted some pretty run-of-the-mill macaroni salad(s) - this Hawaiian version has perked my interest for sure.

I have wasted more rolls of glad stretch wrap because it tends to stick together and Never tears properly! CHANGE THE DESIGN, Glad!! I’ve never used the winning wrap, and the last one I bought was Kirklands from Costco-3,000 ft. At a good price. It has the nice slide cutter. It has lasted for almost 2 years!! But, it has to sit on my counter top. But it stretches and seals perfectly. No more Glad for me, except I love their scented trash bags. a long time ago I worked at a Jimmy John's and they have a variety of chips including a "thinny" reduce fat chip... and the the reduced fat chip was my favorite, and it surprised me. the reduced fat chip had more pronounced potato flavor with the right amount of salt.

I *LOVE* the Reynolds 2000'. When I buy one, I write the date on it with a Sharpie and I have a pantry shelf dedicated to the Reynolds 2000' film wrap and the Reynolds 1000sq.ft. foil. They usually last a year and a half (plus). The foil goes quicker, because I grill a lot and occasionally bbq.
just made this.. delicious! marinated for 3 hours... very crunchie ! -- although i didn't need the water for the marinade... watered down the marinade a bit !.. perfect next time!

This is how I make my Mac salad but for veggies just carrots and sweet Maui onions. Some times add celery.
Or frozen peas! It's what I grew up with celery, onions, grated carrots, and frozen peas, and sometimes canned tuna!
Yes, for the tuna version I add peas and usually use thin spaghetti noodles

I like avocado oil potato chips. For corn chips, La Cucina takes the prize. My personal preference. Not giving an ad. For salad, Cole slaw is my favorite. Chicken fried, served with biscuits and gravy, and Cole slaw.

Can't get the freeze tite plastic wrap in my area but Reynolds cling wrap is the best alternative, thickness is perfect, the width covers cutting boards, slide cutting edge & best of all it clings well & does so repeatedly.
