A friend brought "bean salsa" to a gathering recently and it was so simple and delicious. Cheap too. Black beans, diced tomatoes, corn, diced red onion, lots of cilantro, salt, and lime juice. Soooo good with tortilla chips, but honeslty id eat it kt with a spoon too lol. No cooking or heating necessary
We make this and serve with a side of jalapeño cornbread! We call it blackbean salad, and it's a staple summer meal in our house. Refreshing and delicious!
For my fellow vegetarians - it's pretty easy to make a dupe of the Chipotle sofritas with shredded tofu and blended up chipotle peppers in adobo sauce from the can.
Do you press the tofu first? I always have such an issue getting the tofu to shred without it just falling apart haha maybe I should try freezing, thawing, pressing and then shredding? 🤔
Or just eat a bowl without the tofu. I love tofu, but I don't like the sofritas. I've tried at three different stores because I'm obviously a masochist.
To add to 'I'm cheap and I don't like to go places' I'm also 20 miles away from the nearest Qdoba/Chipotle so I have to factor in what I'd have to spend on gas. Definitely worth doing at home!

Store-bought guacamole or rotisserie chicken can be subbed in, and it would still come in under the cost of takeout. I often ask ChatGPT to suggest a fast-food inspired meal plan for my husband and me, and recipes like this sound better than what suggestions it gives me. Keep them coming!
I have a hard time with food prep I love your videos because they motivate me to not only food prep they help me shop on a budget and I'm even thinking of helping cook dinners for the elderly at my church . Your videos are great love them ! ❤
I sometimes get overwhelmed with food prep. I try to break it down into sections where I'll prepare the chopped veggies and bag them. Then I'll come back later and cook the meat and bag it. When it's almost dinnertime, I'll just reheat items and serve it.
Again Rebecca you cease to amaze me w/your recipes. I REALLY enjoy cooking myself BUT i do find when you make it yourself you know is in ypur meal & you can control the seasonings used. Keep up the GREAT recipes. Love watching your videos❤😊
It's definitely all about what people like to do vs. what they want to spend time and/or money doing. I love cooking, so making my own meals is fun, but I also love picking up a quick meal here and there while I'm out and about, and that's worth it too! Great recipe!
I make these often and save a ton because I'm allergic to avocados. I also make much smaller portions so I save there but not because I want to but because I'm disabled and use a rollator so that means 1200 calorie diet 😭 However, I might have to stop being lazy and actually try marinating the chicken this way. Yummm❤ Thanks so much!!!
If you keep a few pits/seeds from some of the avocados and put them on the top of the guacamole it helps prevent browning. I will also get some cling wrap and lightly press down on the cling wrap to cover the guacamole and press around the edges of the bowl then put a lid on the bowl/ container it really keeps the guacamole from browning and tastes super freshly made! For a little extra you can squeeze some lime over the top of the guacamole before the cling wrap, just depends on how much lime you like to taste
I’ve been doing this one for quite awhile. Love burrito bowls! I don’t care for guacamole or sour cream and add some corn salsa when I make it. The best part is being able to customize!

I couldn't believe how much a burrito, a drink, and some chips with guac were from Chipotle last time I went there! I was hungry though, and was in a pinch for lunch so I gritted my teeth as I paid $31.04 for an average tasting burrito and chips that were so salty I couldn't eat them. :/ Don't think I'll be returning! Your burrito bowl looks amazing, though!
Cooking at home results is more quantity and you get to control quality also. $12-14 per tax for 1 at Chipotle vs less than $6 at home. Absolutely that adds up the savings! ❤
It's definitely worth the effort. The last time I ate at a Chipotle (2022 Stratham, NH) it was so bad that I couldn't even finish my bowl. I could tell that the food had been sitting around for days. Gross, and I paid them over $12 for the privilege of creating food waste.
OMGS,I LOVE YA!!!! I'm so serious 😍 I went and got everything that I didn't have. Which pretty much was everything but the Rice and beans. Hahaha. The beans were a Blessing from some different food banks that I had saved and not used yet. But I used 3 or 4 cans of black beans (I forget) and then mixed in 2 cans of cabin so beans and seasoned them myself. I measured everything even the meat after cooking by ounces and then Divided by 12 since I made Twice as much of the chicken. But I only Use 1 packet of chipotle seasoning mix Because we don't like things too spicy especially my 13 year-old. And it turned out great!!! So 12! Talk about a HUGE SAVINGS. Ours also cost less because our chicken Surprisingly for southern California cost less per pound. LOL. We don't eat out because we can't afford it in the first p!ace. We have only been there once because someone else was buying. But it makes this Momma feel so good to be able to give those copy cat meals that they Loved with out the cost. This Chipotle bowl and a Copy Cat KFC bowl I make are there FAVs now. Hahaha Thank You!!!!

All you have to do is follow the salsa recipe in this video but add a can of drained corn and a can of rinsed and drained black beans. Easy peasy

For the guac, if you have some saran wrap, you can also press that to the surface to keep it from browning if you don't have a small enough container!

What is the knuckle trick for measuring water and rice? I’ve never heard that.
You use your finger to measure the water by adding just enough water so that the level of the water hits the first knuckle on your finger
Where’d you get those smaller containers with the lids?
I got mine from Amazon. They come in 1 cup sizes and more. You can get a package of only one size or assorted sizes.
