Hungarian Green Bean Soup - Zöldbab leves

  • Yield: 1 gallon
    1 gallon (3.58ltr) Chicken Stock
    4oz. (113g) Smoked meat or kolbász
    1 lbs. (453.5g) Green Beans, clip and cut into 1 inch (2.5cm) pieces
    2 cloves Garlic, shaved
    1 lbs. (453.5g) Yukon Gold Potatoes, peele & diced 1 inch (2.5cm) pieces
    1 Tbsp. Dill, fresh recommended but dried will work
    2 Tbsp. Blended Oil
    As Needed Hungarian Paprika, ground
    As Needed Salt and White Pepper
    As Needed Slurry (milk and flour)
    Method:
    1. In a sauce pot over medium heat add the blended oil and smoked meat. Slowly cook for 5 minutes to render the fat.
    2. Add garlic and sweat for 3 minutes. Add potatoes and cook for 1 minute.
    3. Add stock and simmer gently until potatoes are almost done. Approximately 7 minutes.
    4. In a small bowl mix the milk and flour until it makes a thick liquid. Thicker than heavy cream
    5. Add to the simmering soup. Whisk until all lumps have dissolved.
    6. Continue to simmer for 10 minutes. Once desired consistency is reached, remove from heat and add beans, dill, paprika and adjust salt and pepper. Serve
    Notes:
    • I prefer firm vegetables, so I add the beans at the end to avoid “killing” them.
    • Smoked meat is optional, but it gives amazing flavor

    This soup looks delicious, I can’t wait to make it! I am Romanian and our soups are similar. Milk in soup is absolutely delicious i.e. cream of cauliflower soup. For people with a lactose intolerance, you can substitute a vegan milk such as coconut milk, it will alter the soup flavour but still be delicious. I use coconut milk in my soups and they turn out well. Thank you for a wonderful recipe chef!

      Thank you very much! Yes, there are many similarities with Hungarian & Romanian foods. Almond milk would probably work better as it is not as sweet as coconut milk. Also, if you thickened the soup with a light roux and instead of using butter with the flour, use grapeseed or blended oil to maintain the lactose free dynamic.

    It’s also my favourite childhood soup, my grandmother made a roux base with hot paprika powder and finished it off with sour cream. Very nice presentation, many thanks for posting it!

      Thank you for your response. It was always one of my favorites as a kid. I know quite a few people that make it with a roux. One of my wife grandmother’s makes it with roux and the other like mine. My opinion is the roux would make it thicker and richer. Jó étvágyat!!!

    Ok... so i had some really nice fresh Green Beans and wondered if there was a recipe that I could make a "unique" soup with them. Mind you in all my years I never heard of "green bean soup". I use green beans in my vegetable soup and consider them to be indispensable in that recipe but I never knew there was a soup called "green bean soup". So I did a search on UA-cam and up came your Hungarian Green Bean Soup. I love the to try cuisine that originates in countries who's food I'm not that familiar with. So... I had to make it! Of course I didn't have "Venicen Smoked Sausage"... I did my own thing and used 3 different meats as a base. For the most part i followed your recipe. The soup turned out to be quite good possibly a favorite! I like to wait a few weeks to see if I crave a recipe again before i consider it a favorite. But I'm sitting here eating it a second time the day after so I'm headed in that direction. 🙂Thank for for a recipe that I didn't know existed! Any more unique Hungarian recipes? I've subscribed and I'm ready for the next one. This was a very long way of saying thank you for your generosity.

This soup is one that I ate a lot as a child, but of course I modified the recipe over the years. I do have other Hungarian recipes on the channel under my Hungarian playlist. I think one that is very easy and everyone enjoys is called lecsó.       Hello, yes Csabai would be great. Essentially any smoked meat that can render fat would provide more flavor. Even though some of the kolbász is drier than others, you just need to finesse it a little more by not using too high of heat. No the beans were not blanched. I am SO picky when it comes to cooking vegetables. I literally turned the heat off, finished the seasoning and added the beans to steep. That way when I served the soup in 10 minutes the beans still had a bit of snap to them. Even during the reheat process the beans were not killed.

      Not a fan of soup with dairy are you? Then you must really hate the Italian classic Zuppa Toscana!!! Many soups contain dairy such as heavy cream or milk of all kind and it doesn’t make them “bad” or the “worst”. There is also a classic sauce called Mafalda which is tomato sauce with heavy cream. Thank you for sharing your opinion!
