    Ingredients :
    Rice 3 cups
    Ghee (Clarified butter) 2 tablespoons
    Mutton 600grams
    Pyaaz (Onion) 2 medium size sliced
    Hari Mirch (Green Chillies )-2
    Kashmiri Chillies (Dried Kashmiri chillies ) - 2
    Lal mirch powder(Regular Red chilli powder) 1tsp(or as per your taste)
    Salt as per taste for 600gram mutton
    Haldi Powder (Turmeric powder) Half teaspoon
    Adrak Lasoon Paste (Ginger garlic paste) 1 table spoon
    Dhaniya (Coriander)
    Whole Spices:
    Chakra Phool(Star Anise) 1
    Badi Elaichi(Black Cardamom) 2
    Laung (Cloves) 6
    Tej Patta (Bay Leaves) 4-5
    Dalchini (Cinnamon) 1inch (single piece)
    Jaypatri(Mace) 1/8
    Kali Mirch (Black Pepper) - 10
    Method:
    In a cooker/pressure pan heat ghee , add the whole spices, let it release it’s aroma.
    Add the Kashmiri red chillies break them in small pieces before adding.
    Add green chillies, let it saute for a few seconds. Add sliced onions. Fry until golden brown.
    Add ginger garlic paste, saute till raw smell of ginger and garlic paste is gone.
    Add mutton, mix well and let it roast for about 6 to 7 minutes on high flame.
    Prepare the curd by adding red chilli powder, salt, turmeric powder.
    Make sure the curd is mixed properly and is smooth.
    Add the curd mix to the cooker. Add half cup water to the curd bowl, rinse it well add this water to the cooker.
    Let the mutton cook in the pressure cooker. One whistle was enough for us as the mutton was tender.
    If your mutton is not tender then two whistles would be required. After whistle, turn off the heat, let the cooker release the pressure naturally and check if the mutton is at least 80% cooked.
    Meanwhile wash the rice in a pot. Heat 4 cups of in a pot so that water becomes warm (not boiling)
    Open the lid and turn on the heat at high flame, add washed rice, mix for a minute, let it soak the gravy/juices.
    Add the heated water to the cooker, mix well, let it boil. Taste the broth for salt level. Add salt for rice.
    Let this pressure cook for two whistles. Once the pressure is released, add coriander to garnish and enjoy.
