"Furrs Cafeteria Strawberry Pie" - My Childhood Memories.

  • Pat in a pan pie crust...
    1 3/4 cups all-purpose flour
    1/2 teaspoon salt
    1/2 cup vegetable oil
    2 tablespoons water
    In your pan combine flour and salt, stir in oil and water, Mix until combined ( I use a fork)
    Do the best to spread out and evenly pull it up the sides. This will take a few minutes
    You'll want plenty of dough up the sides too so you can crimp it at the top edge. You can even get in there with your knuckles if you need to
    Make sure you also press down into the bottom rim of the pan too to spread out the dough and so it's not too thick
    Then you can start to go around and crimp the top edges of the crust.
    Once it's ready...
    Strawberry pie filling glaze and instruction for assembly.
    1 (9-inch) pie crust bought (or make your own)
    1 cup water
    1 cup white granulated sugar
    3 Tablespoons cornstarch
    1/4 cup strawberry gelatin powder (Jell-O)
    1 post fresh strawberries (tops removed and sliced into quarters)
    Instructions
    1. Prebake 1 (9-inch) pie crust accordingly (making sure to prick the crust with a fork so it doesn't puff up too much while baking). Cool to room temperature
    2. In a sauce pan, over medium-high heat, add 1 cup water, 1 cup white granulated sugar, 3 Tablespoons cornstarch and 1/4 cup strawberry Jello Whisk together until thoroughly combined.
    3. Whisk mixture constantly while heating to prevent clumping or scorching until mixture begins to come to a gentle boil.
    4. Remove the pan from the heat and allow the glaze to cool. Tip: I like to put the sauce pan into my sink where I've made some ice water.
    5. As the glaze cools it will become translucent in color and you should notice it will thicken a little more as well. Whisk it occasionally as it cools. It should be thickened but still pourable.
    6. Add 1 pint fresh strawberries (tops removed and sliced into quarters) to the baked and cooled pie crust.
    7. Pour strawberry glaze over berries. Making sure to get it in between the nooks and crannies of the berries as best you can...
    8. Spread whipped cream on top of make the merange topping as Billy Gene did...
    Refrigerate for at least 3 -4 hours...
    375 for 20-25 min until golden.
    MERINGUE RECIPE FOR ANY PIE (EASY)
    1/2 cup egg white out of carton
    1/2 tsp cream of tartar or 1 tsp lemon juice if no cream of tartar
    2 tbsp sugar
    Bet with mixer on hight till white glossy peaks form, spread on hot filled pie, seal the edges around crust, bake 375 for 4 min or browning peaks, watch very carefully will burn in a second.

      I use Bluebird as everyday flour, but I also buy white soft berries and grind from palouse ...I'll do a video on this soon. Glad u asked.❤️
