Oooh, that does look good! The only dish I make with aubergine is Lebanese moussaka, which is a kind of stew with chickpeas and tomatoes. It's delicious hot or cold, and I highly recommend it!
@danielleptc I've done a Greek Moussaka but love chickpeas so will have to try that.
