I've been researching Menudo recipes for the last couple of days because I've never had the dish and I'm dying to make it. I've seen A LOT of recipes but yours is the only one I've seen so far using beef bones. What I really like is how you went the extra mile and removed and added the tendon bits that were clinging to the sides of the bones to the soup. That was genius. I love the texture of tendon if it's not overcooked. This is the recipe I'm going to try. Thanks.
Same here I always ask for no pats because I am embarrassed to chop down on that huge piece of bone in public LOL but love when I get bits of it because it truly completes the dish.

This is exactly the time and care that should go into menudo. Very well explained. I think I will do the shank next time, but it's pretty much the same traditional recipe that has been in my family for generations! Will bookmark this for sure
Made this today! Had to improvise with the peppers as I could not find Guajillo peppers. This was hands down the best tasting Menudo I have had in a long time. And the neat thing is I made it. Thanks for sharing.

James, You had me at the gelatinous morning shot!! I know that menudo was rich, sticky and delicious. I was surprised at some of the ingredients! I thought that it was an all pork dish. If I can find some cows feet I am going to try it this way. Outstanding!

James great rendition for your recipe for Menudo Rojo.Being from Colorado, this stew it is as you said a big deal on the weekends. I have had a love hate relationship with Menudo since I 1st tasted it. The reason I hated this dish reside and the fact that I dislike organ meat, and many of the other ingredients that go into this southwestern/Mexican recipe. The love is that it tastes absolutely fantastic.I think you did a exemplary job in posting up your rendition of this classic hangover cure. "Cerveza hoy, Menudo mañana" a fantastic battle cry!
I love how you cut the tripe in small pieces. I agree with you about not using the chili water it is dirty. I also liked how you blanched the cows legs their much cleaner afterwards. Looks delicious.

This is a very clean menudo built up like a good soup should be done. I've heard from a Mexican friend of mine not to clean the tripe too much as it gives it more flavor, but he was probably talking about fresh off the cow tripe....I don't know if I heard that wrong or what, but I'll have to check into it, otherwise I'm going to add this to my list of recipes...Your a damn good cook James. Watching you top that bowl off with all those final ingredients made my mouth water. I love menudo!
I love love menudo!! This is a great recipe. People around here put beef feet in the soup, in the video you called it shank...which would be like the calf (leg) I'm guessing. I've made it with pig feet and the tripe. Anyway you make it...it's delicious. Again, awesome video!
LOVE THE WAY YOU COOKED THIS! I have always had a love/hate relationship with menudo. I just can't get past how fatty some people make it. Also dicing up the tripe. I hate giant soggy squares that take forever to chew. THANK YOU SO MUCH!😭i

I'm making some manudo right now. My grandma's recipe. All the "cleaning" that you are doing is nice but that's what gives flavor to your menudo. You put a lot of effort on it I'll give you that.
