How do you make the apples stay fresh for display after cutting them?

You can inhibit the oxidization of the apple for a few hours (or pretty much any fruit and even potatoes for that matter) in by creating a bath/soak for them. The first two ways below take about 3-5 minutes, just rinse afterward and they shouldn't taste "off" unless you leave them soaking too long.
The first method is creating an acidulated mixture with high vitamin c concentration. For that you mix a tablespoon of juice (lemon, lime, and pineapple work) with a cup of water. You could even just use vitamin C tablets or lemon-lime soda if you have it handy.
The second method is the utilize salt as a preservative in a mixture of about half a teaspoon with one cup of water.
The third method is to blanch the apples by boiling them in water for about 5 minutes, but this can soften the apple quite a bit and is better left for those you'll be using additional cooking methods on later.
A few more things to keep in mind:
* Different varieties of apples brown at different rates.
* The metallic compounds in your knives will react with the chemicals in the apple. Thus it's generally better to utilize a non-metallic blade such as a ceramic for getting cleaner results.
