  • Bruschetta is the outlier of our tomato-based salatas bunch. It is not a relish, but stuff-on-bread. Still, since it has the same basic ingredient combination, it felt shitty to leave it out in the cold. A drizzle of the sort of balsamic vinegar that costs as much as a college education would not be unwelcome. The main thing, other than not adding in a bunch of extraneous stuff, is to just rub your toasts with garlic, not to put the garlic in the mix. Va bene?

    When I lived in Barcelona, What they would do is just rub the tomato on the bread. It was also important for some reason to used canned Cento Peeled Roma tomatoes.
    I certainly preferred the tomato rub over the chunks. Also I was told garlic in Spain is not as strong as what we get in North American, because it certainly wasn't overpowering.
