    #CurryRecipeIngredients:
    1 kg Desi chicken (country chicken), cut into pieces
    2 large onions, finely chopped
    2 tomatoes, finely chopped
    1 tablespoon ginger-garlic paste
    3-4 green chilies, slit
    1/2 cup yogurt (curd)
    1 tablespoon red chili powder
    1/2 tablespoon turmeric powder
    1 tablespoon coriander powder
    1 tablespoon cumin powder
    1 tablespoon garam masala
    Salt to taste
    Fresh coriander leaves, chopped (for garnish)
    4 tablespoons mustard oil (or any cooking oil)
    1 teaspoon cumin seeds
    1-2 bay leaves
    2-3 cloves
    1-inch cinnamon stick
    3-4 black peppercorns
    Instructions:
    Marinate the Chicken:
    In a large bowl, mix the chicken pieces with yogurt, red chili powder, turmeric powder, salt, and half of the ginger-garlic paste. Let it marinate for at least 30 minutes (the longer, the better).
    Prepare the Masala:
    Heat mustard oil in a large pan or kadhai until it starts to smoke. Then, lower the heat and add cumin seeds, bay leaves, cloves, cinnamon stick, and black peppercorns. Sauté for a few seconds until fragrant.
    Add the chopped onions and sauté until they turn golden brown.
    Add the remaining ginger-garlic paste and green chilies. Cook for 2-3 minutes until the raw smell disappears.
    Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
    Cook the Chicken:
    Add the marinated chicken to the pan and mix well with the masala. Cook on high heat for about 5 minutes, stirring occasionally.
    Reduce the heat to medium and add coriander powder, cumin powder, and garam masala. Mix well.
    Cover the pan and let the chicken cook in its own juices. Stir occasionally to ensure even cooking.
    If needed, add a little water to get the desired gravy consistency.
    Cook until the chicken is tender and fully cooked (this may take around 30-40 minutes).
    Garnish and Serve:
    Once the chicken is cooked, garnish with freshly chopped coriander leaves.
    Serve hot with steamed rice, roti, or naan.
