In the last drill, I understand it makes more sense from body mechanics perspective for Bella to have used the hand the subtitle suggests. But by, for example (see 17:03), moving to her left and approaching the defender, turning her right shoulder into the defender and hand balling with her left, in a way that is actually protecting the pass by keeping the ball away from the defender? If she used her right as suggested, a defender is more likely to be able to reach and slap the footy/block the pass?

The main aim of the drill is to engage the defender and then give the handball just before the defender is close enough to impact. It is about timing as if you give it too early the defender will adjust and tackle the receiver.
Maybe use a bounce back net like for soccer or lacrosse players. Even a wall is an option for handballs from a short distance. More limited with those suggestions but you can adapt a workout.
