to the end of the video you've got right to the point... a wine cooler is very good of course. a temperature between 17°c and 20°c ~ 20,6°c too...
being the cocoa from Trinitario or Forastero species and the temperature can easily be between 18°C and up to 21°C at the most.
being the cocoa from Criollo, Catongo... or a very rare [Joia do Pedregal ~ a premium and rare cocoa from amazonian forest which is part at Venezuela and France Guyana] then the ideal temperature is between 15°C and 17,4°C at the most.
I guess too, keeping at opened spaces as in some kind of metal, steeled bookshelves but temperature being largely controlled and kept between 17°C up to 20°C maybe a good idea too.

here in são paulo, I have seen some supermarkets selling a kind of silicon material which you keeps refrigerated... then you can remove from freezer and uses them to protect items which need refrigeration or so, for example keep some foods at lower temperatures at medium and long trip (but at no risk of frozing the food as in the case of ice cubes within a box or so).... I thought very wise the use of those silicon materials

No I haven’t, because I don’t have space in the freezer 🤣 but I’ve heard multiple times that it works great!

I live in Sydney and humidity here can be a big issue with our current climate . I also heard putting some bicarbonate of soda in a container would help absorbing humidity in the fridge or wine fridge for exemplo. I am trying this atm . 👍

My room temperature is mostly 32° C.. Chocolate doesn’t set on my room temperature.. I have to put it in freezer.. So what's the solution..?
There’s not much you can do. If your chocolate is blooming or gets out of temper you unfortunately might have to wait for cooler temperatures.
It's so hard for me since in my Country Malaysia the weather is too humid and it's hard for me to deliver my Bonbons 😭

hey ... dogs cannot eat chocolat, because cocoa is a dangerous life poison to them...
cats simply smell the chocolats and never try them probably they hate the smell or so...
but mice and hamsters they strongly love chocolats... specially truffled chocolats and cognac ganache chocolats... I discovered that after working sometime ago, at a very popular brazilian chocolat producer and store here in São Paulo city capital. a very charismatic mice family They ate to that time, a full 4kg pack of truffles.
that proves mice are high society animals... they love chocolats and cheeses.
