The whole "Neither one would just jump into conflict..." deal is sorta explained away by the First Rule of Death Battle. Rule #1 is that all morality a character has is thrown out the window. Even a character that doesn't kill has that morality removed for the sake of the battle and will fight to the death to try and beat their opponent. Neither Kekashi or Obi-Wan would actively go looking for a fight in such a way, but for the sake of the Battle, that characteristic is taken out of the equation.
To answer your question about why they are fighting right off the bat, it is because in death battle all restraints about killing and senseless violence are removed.
I think Frieza's opponent should be Megatron (Transformers) - Both are intergalactic tyrants - Have entire armies under their command (the Frieza Force and the Decepticons) - Are the arch-enemies to the main heroes who they came to Earth to kill (Goku and Optimus Prime) - Have different powers, yet with similar themes, which could be interesting to pit against - Ruthless, cold and dictator-like personalities - Have multiple forms
As Vader/Anakin once said to Palpatine/Sidious and Admiral Motti, that even the tremendous power of the DEATH STAR pales and witheres in comparison to the POWER of THE FORCE!
Most of the deathbattle videos are just, randomly they're fighting. Kakashi would probably have asked if he was ok, or at least if we're going for "he has to defend the city or something something duty something something complete" He'd agree he wanted to go home and read, but he couldn't. Just a bit out of character to "just I want to kick your ass"
I can't lie I was rooting for kakashi, obi wan is awesome too. Doesn't kakashi keep obitos eye for double mangeko or however you spell it sharingan. But the fight was amazing, I love anime vs movies or cartoons. This was a fight I never knew I wanted

I just want to say that they kind of didn't give Kakashi all that he has and I feel like if he had had all of the Jutsu or that they utilize some of his more well-known Jutsu that he could have won especially since they're both supposed to be at their Peak so I feel like he would have had a faster reaction time than Obi-Wan
