Like the grill grate, if you want that crust go five to six min first flip only way ive ever had luck on a charcoal grill. Seems like 7-8 min you risk burning the fat and 9-10 your guaranteed to.... someone may have a better way. All I know is crust is made from raw to first flip... you can filp often after at least you get one side with a nice sear guaranteed I always try for both tho....
