Just one suggestion, after you finish a piece, be it the shell or each of the legs, toss it into a small bowl of water so it wont tarnish or darken in color by the time you finish the whole piece, as is it a time consuming procedure.

You can wrap the fruit platters with cling film and keep in the refrigerator until serving. Hope this helps.
