In the video, about halfway through, she selects "play recorded speech" as an option. Then she played the voice/sound off her phone nearby (couldn't show the phone on camera) and recorded the sound. In preparation for this, she had recorded the audio on her phone before she began. You can record yourself talking, use audio off an audiobook, even use a youtube clip.
