I’ve never done this but plan to very soon. You did a great job. Very inspiring video. The only thing I might try differently is tie up the 1/4s before the cook or maybe bone it out and add the hind into a ham net. My mouth is watering watching this.
Mark, when you came through the door with that cooked Ham, I started singing "Meat Man" by Jerry Lee Lewis. There should have been a public announcement of the Meat's arrival, Although , Lauren's did get batty eyes, saying "Looks like Thanksgiving". She was claiming her Man. Thank you, for teaching us how to smoke. Looks time consuming but worth it in the end. Plus a smoked anything can serve multiple meal. Have you ever tried smoking sausage? I am Polish so, good smoked sausage is always a treat. Then you guys should make sauerkraut. Good camping food. Smoked sausage with kraut

We were out ice fishing the last two days and ate the last bag of the garrets popcorn while jigging for lake trout at -10. It made me smile, thanks for being supporters.

I’ve done bone in and bone out, just depends on what we are looking to do. Maybe I could do the net thing? Maybe it would help with having a consistent size/mass for cooking? Hadn’t really considered it.
That is so cool, this falls deer will definitely use the back legs for a couple of hams. Have to talk the hubby into getting a smoker lol .

Yes, I took them out. I don’t think you want to eat those.
