Glad the chef keeps his integrity intact. He deserves michelin star. And Byungheon….. he should be better by now. He must really be blessed to not have gone bankrupt with how he manages his business.
It's a japanese style noodle made from wheat flour. Similar to Noodles used from ramen but thicker and doesn't have eggs (generally just flour, water and salt).

I love udon but since its too thick, the noodles become sponges and sop(?) up the soup base.
