Hi I made this and taste delicious. It is airy & fluffy once done. But it turn abit hard after refrigerated. I have to leave it in room temperature for 15min or so & it will be softer . Pls advice any if I can fix this ? Tq
I'm using the pure dark chocolate of Callebaut brand. For whipping cream, this is a non dairy whipping cream of Rich's brand. However any dairy based whipping cream can also be used.
Hello, 50% dark chocolate still contains a lot of sugar to pull this off. You can taste your mixture and if needed can add powdered sugar to your Mousse. Also, the whipping cream being used here also has some sugar.
Hello, We use only 2 ingredients - Chocolate & Whipping Cream! Ganache is made using these two and then more whipping cream is whipped and mixed with the ganache. So that's it, 2 ingredients.

And if you don't want raw egg, you whisk/temper the yolk and chocolate mixture in a double boiler like you would when making a custard. Chocolate whipped cream isn't mousse. It's literally just chocolate whipped cream. Is it delicious? Hell yeah. Is it mousse? Nope

Please increase the amount of cream a little bit, it will be more softer that way.

Soooo chocolate mousse with only chocolate and whipped cream isn't chocolate mousse. It's literally chocolate whipped cream.
