Please do not boot me from the Pasta Grammar Club. I'm living in Abruzzo from Texas, and had some zucchini our neighbors gave us from their garden, so I made Rabutan with grated salted zucchini that I pressed the water from. I did not drain the ricotta overnight, but scraped it from the dry top. I used some Abruzzo Caccio cavalo cheese; did not have any parmesan. I didn't have enough bread crumbs, so I subsidized with a little flour. We do not have an oven because we haven't remodeled the kitchen yet, so, after I poached them, I rolled the dumplings in flour and fried them in olive oil, and put some pomodori that our neighbors made on top. Thanks for the recipe, it came out great.....can not wait to make it the right way!
No measurements and that is simply how some things are done. The first time I made fresh egg pasta, I asked my grandmother how much flour to put in, she said, "until it feels like pasta dough." LOL
There are things in the kitchen that don't need measurements. All it takes is practice. Those who have no practice in cooking, try to measure everything. On the other hand, those who have experience, don't use scales, don't measure anything. :) All it takes is eyes, sensitivity in the hands and some common sense.
@battiekoda she was amazing, and so right. Some things just can't be measured, and need experience. The only way to do it is to just try. 20 years later, I make pretty good pasta.
Similar experience asking my Sicilian aunt how to cook. No recipes, no measurements. “Now you add the flour.” “How much flour zia?” “Just enough.” “How much is just enough?” “Not too much.” “Ok. But how many cups?” “How should I know! Get a cup and put in flour with it if you want to. Stop when there’s enough. You ask too many questions. Just do what I do.”
@mechanicalman1068 lol exactly this. "But gramma I never made pasta before." "You watched me make it." "Yeah but," "Well when it looks like dough, then it's dough. If it sticks you don't have enough flour. If your arms get too tired you probably have too much."
Pasta Grammar videos are the only videos that I watch that actually take me back to my childhood when I was going every Sunday to my paternal (Sicilian) grandparent’s house for dinner. I can smell Eva’s wonderful cooking coming through. LOL
For years I read books by Miss Manners and she had rules about what happens at the dinner table, but in the kitchen, anything goes. Pick up those bones and gnaw on them, lick the plates and bowls, whatever you want. Thanks for the behind the scenes peek. There is no better way to convey how good the food is than to show how you will not throw away even one drop.
I think I had a religious experience after the first one, 😇😂and then you started playing the “heavens open up” music for the last one and I knew heaven was just getting better and better 😂. I absolutely love a thick pasta. ❤️These remind me of dumplings and I love dumplings. ❤. Now I need to go watch the video and make ricotta 😂. Lord my “want to” and my “ can do” just don’t understand each other at all 😂. Same with the grocery shopper me and the cook me😂. I These look sooooo good!! I’ve made a few of your recipes and they are always amazing. I can’t wait to get my book!! ❤ I am definitely trying at least one of these!! I love Sunday mornings with you guys! It’s just so much fun and I learn so much. So, this 67 year old lady is heading to the grocery for a few things 😂😂😂😂
❤ My dad was from Centrache, was Chef here in the states for 50 years, had many fans and devoted "eaters" of his food. Many of the dishes you make, were staples for me growing up, including some of these. You're videos reminded me that I need to continue the traditions. I hope to be able to go on one of your trips sometime. But until that day, mangia, mangia!! And thank you for the wonderful reminders.
This was the first time I noticed the UA-cam plaque in the background! Congrats! I love your channel! Thank you! A friend recently gave me a plaque that says, "Life is short, lick the bowl!" Now I'll think of Eva every time I look at it! 🤣
Hi Guys~ my Mom would make the first pasta, too. (May she rest in peace🙏) Hers were traditional Gnocchi size. She served them with simple tomato sauce. I've made them, but it's been years. If I do a Family Dinner, I tend to make Manicotti, my great-grandson's favorite. Love watching this channel. Brings back wonderful family memories! 🙋
I love seeing Eva licking her plate. I grew up doing this and especially my father doing this. He is gone and he is the first one I thought of. Good memories.
I'm German and I also do that because my grandfather also did it whenever he cooked something really tasty. I always thought it was inappropriate but it made me smile to see Eva do it as well and feel the flood of good ol' memories with my Opa :3
Hehe my mom did and my father would sit there “hrumpfing.” He’d do it when she chewed steak bones too. His upbringing didn’t instill much appreciation for food, because his mother was objectively a terrible cook. 😬
What i just love, love, love about Eva, that she is so keen and knowledgeable about recipes, not only of her region, but all over Italy! i never seen that with the many very great home cooks in Italy i know. Brava!!!🤩
One of the best things about Italian cuisine is variety and with Eva being such a masterful and versatile cook, I imagine that Harper is very often a very happy man like today 😉
Every single time with every video you keep exposing UA-cam's limitations: - the like button should be automated... I mean is there any doubt I'm gonna like the video at the end? no - it should be possible to click multiple times and cast more than one like per video, really, you deserve it Great job Eva those dishes look all delicious!
I really love how you show the different regional Italian dishes rather than only the traditionally popular ones. You have definitely expanded my horizons in Italian cooking!
I don't know how to say this so I am going to say it and I not pulling any punches. Thanks to Pasta Grammer my own knowledge of the different kinds of pasta thank you both of you
Oh my goodness! Roy and I enjoyed watching this video so much. They were 3 amazing pasta dishes, but I have to say I would be afraid to try making them. You are such an adventurous cook, and I think you are fearless Eva and would try making any new recipe. We can't wait for your new cookbook to become available; we did our pre-order back in May. Thanks for your great videos. 😊 Christine
I love you Eva!!! ( I see you licking the plate like when I was a child!!!) Running away from Grandma and mom...screaming to me : Don't do that!! The war is over!!! LOL...OH MY GOD! So funny memories... Thank you guys, you make a beautiful and funny video. I'm a proud subscriber. Regards from Chicago, Fred.
Eva you've outdone yourself. These 3 recipes are my favourite so far. And I love everone of your recipe. I come from a family of excellent Calabrian home cooks, including my mother. You are by far, the best "Italian" cook that I have never met. I am going to try all 3 of these delectable recipes. What Calabrese doesn't love chesse and more cheese?
Oh my! I think I am related to Eva! She even cuts pizza with scissors!! Anyway, this episode cinched the pre-order of your fabulous cookbook! Can't wait to try all three! Just made the farinata and thoroughly enjoyed. Gracie, Kit DeDominicis
Zia Maria taught me to make ndunderi. We made them smaller, though. Maybe two-thirds that size. She was 4’10 (147cm) and I was 8 years old, so our hands were smaller. In any case, they are delicious and I still make them from time to time. I’ll snap a pic, next time, and send it along. Thank You, Eva and Harper. I look forward to Your videos every Sunday! ❤🍝❤
OK I have a new name for Harper's favorites since there are so many and the word favorite kinda refers to a top spot.. Let's just call them all the things that would be on the table in Harper's Paradise..
Bravo!! I so love the way Eva cooks, so relaxed and confident! Harper, You are the perfect at critiques. Definitely will purchase the cookbook immediately!! Thank you for this wonderful video with so much info!
Omg I love Eva licking the plate! That is something I do at home when something I have fixed is excellent and I just can’t waste the sauce but don’t have bread mop it up with. I love it😂 I can’t wait to try these dishes. I just got some sweet Gorgonzola and I am definitely going to make one of these dishes with that last sauce❤ thank you both for sharing the beautiful and delicious dishes of Italy with us all because we can’t get the real things in restaurants here most of the time. Bless you both! Preordering your book now!
When I saw the title, my immediate thought was gnocchi, but I have never seen gnocchi like that before! I am growing San Marzano style tomatoes for the first time at home, and I am looking forward to using them, perhaps with this gnocchi.
These recipes sound incredible!!!! I absolutely LOVE LOVE LOVE ricotta!!!! This is one of MY favorite episodes!! (Me too, Harper. Me too.) ❤❤❤❤❤ Also, I got the Little Mermaid reference. You’re so punny Harper (as in that was a bad pun) lol!
Wow these look so good! Especially 1st and 3rd recipes! Could you please make me all 3? 😂❤❤❤ ...for real, that would be amazing lol ...and I'm pre-ordering that cookbook!!!! 😊
Yes! Yes! Yes! I haven’t had this in years!! Bless you!💕💕💕💕 @pastagrammar there was a lemon sauce that we used to eat this with (the first pasta) It was creamy but you could taste the lemon. Just watching this video I could taste the sauce my Uncle Mario used to make just for us kids during the summer for this pasta. Can you tell me this lemon sauces name and is it possible to have a video how to make it? The sauce was so good! I swear the angels sang when you made the last pasta and sauce. 😇
Thank you for following the law: We absolutely needed to see how deeply Eva loves that Gorgonzola sauce. You two are among the very best this platform has to offer. Salute!
Buongiorno 🌞....grazie!!! Great segment as always!!! I saw the "ricotta" and thought of my mother and family, yes we do this! Gnochi made with ricotta is so delicious, one of my favorites and I appreciate how you used the Sweet 100 tomatoes. 🌞 I appreciate your cooking methods, very good technique.
I cant wait for sunday to see Eva cook..I love her way of cooking I must buy your cookbook Thank you for showing us to make so many wonderful italian recipes❤ My mother in law taught me to make a meatball mix with fresh spinach and cheese rolled like a football or torpedo and fried in olive oil..it's an appetizer and she called it long johns???she said her Sicilian mother in law taught her to make these
He probably pronounces it easily when he’s not thinking about it. But as soon as he begins thinking about it, that familiarity flies away and he’s confused.
I learn something new every time I watch your videos! Like the swiss chard vein removal! You are amazing Eva! Thank you. ❤ P.S. Gorgonzola sauce is one of my fav's!!!
Loved the plate licking at the end of the video. Even at the esteemed age of 73, I’ve been known to do the same. 😂 When the food is just so good, and there is no fresh bread to be found, it’d be a sin to not get every little bit.

Well, that's a great law! You're both adorable! As a disabled person, often eating just one meal a day on welfare (in Germany...) I eat better because of your recipes. Good luck with the cookbook... I'm going to try and save up to afford it for a Christmas gift to me.
If you had to choose ONE of these ricotta pasta dishes to try, which one are you going for?
Ricotta pasta with dill is everything, whatever other condiments you choose…
tutti
tutti, li voglio tutti
That big ol' gnocchi does look good 👍 🤤
I have to go with the baked one if I could only have one of them
3:21 ….”It is like a mega Gnocco !”…. Harper is already seeing the heaven ! 😀

Proper home style cooking - I used it 'cos that's what I had!
Watching Eva cook is like witnessing alchemy. Can't wait to receive your book.

Eva & Harper "You're our favorite!!" -All Of Us Viewers 😊😊😊
If Eva cooked for me, every single dish would be my favorite too. Yummy!

It was priceless 😂

A classic Pasta Grammar episode. It’s like 3-for-1. Can’t wait to try them all. ❤
The last recipe knocked my socks off!! Eva is fantastic in the kitchen, a magician! She gives a new definition to eating everything on you plate...💖
I love seeing Eva licking her plate. I grew up doing this and especially my father doing this. He is gone and he is the first one I thought of. Good memories.
I do it too! Why waste the BEST part?
I'm German and I also do that because my grandfather also did it whenever he cooked something really tasty. I always thought it was inappropriate but it made me smile to see Eva do it as well and feel the flood of good ol' memories with my Opa :3
I'm one of the Italians with the roman nose so it's pretty tough to make that happen without looking like a toddler learning how to eat lol
@@mattf9096 Do it anyway, know the pure joy and freedom of not giving a damn what anyone else thinks! It'll taste even better! 😄
Hehe my mom did and my father would sit there “hrumpfing.” He’d do it when she chewed steak bones too. His upbringing didn’t instill much appreciation for food, because his mother was objectively a terrible cook. 😬

I don't think there's anything Eva cannot make..😮 Amazing!
Thank you Eva and Harper ❤
But Eva, even if she doesn't know something, tries anyway, she never gives up. 😉
“Very big snake” so relatable especially for the little chefs. Mega gnocchi! Love the enthusiasm, great content. Thank you both for sharing! ❤
The Swiss chard that you removed we called string when I was growing up. We ate a lot of it because it was cheap back then.
One of the best things about Italian cuisine is variety and with Eva being such a masterful and versatile cook, I imagine that Harper is very often a very happy man like today 😉
I've never been jealous of your enjoyment of these dishes UNTIL NOW! OMG. It all looks so delicious!
They all are so freeking good, but that last one with Gorgonzola just made my day... First ones from Amalfi was very unexpected - very much endeed...

Eva's side-eye game does not stop, and I love it.
Yes! Little mermaid! Guys you are such a joy to watch. Thanks for the recipes too. And I also love the education about Italy that happens here
Eva, I think Harper LOVES everything you make!
Anything is pastable. On any given Sunday ❤
“Mega Gnocchi” Ndunderi fantástico ♥️
I love how Eva takes a bite, smiles, then makes a quick glance to "Arper" to see if he is also in ecstasy. You two are too cute!
I don't know how to say this so I am going to say it and I not pulling any punches. Thanks to Pasta Grammer my own knowledge of the different kinds of pasta thank you both of you

Impressive on how easy it is to make ricotta. Such a great versatile delicious cheese. We get it hot here at our local cheese shop ❤♥️🙌🥰🇨🇦
Such a pleasure to watch your videos. Eva really an amazing chef.
My local Italian restaurant occasionally makes this pasta and it is beyond delicious. Staggeringly good!
Whoops, only the first one.
Oh my gosh! These look absolutely gorgeous. Well done, Eva! I immediately went and preordered your book ❤ congratulations to both of you x
Love gnocchi!! These recipes look amazing and we can't wait to try them! And the outtake at the end...that is the BEST way to Scarpetta the plate 🙂

The Gunocchi Con La Fioretta I’ve had before and loved it, when sweetly has time it’s what’s for dinner.
I love the way (licking the dish) she is so real. Harper you are a very lucky man.
Zia Maria taught me to make ndunderi. We made them smaller, though. Maybe two-thirds that size. She was 4’10 (147cm) and I was 8 years old, so our hands were smaller. Wow these look so good! Especially 1st and 3rd recipes! Could you please make me all 3? 😂❤❤❤ ...for real, that would be amazing lol ...and I'm pre-ordering that cookbook!!!! 😊
Just love this pasta!! Looks amazing.
The Agnus Dei on the presentation of the pasta con la fioretta was lowkey blasphemous and we love it 😆
Pre-ordered the day you announced! So excited.
Just made Gnocchi Con La Fiorenta.....delicious. Quick and simple to make. Thank you, Eva.
Have to get the book! I hope this is in it! Amazon says it will be out October 1! It is ordered get yours today!!!
Please make this available in a spiral bound format. It is easy to leave open to desired page on the kitchen counter while you cook!
Yes! Yes! Yes! I haven’t had this in years!! Bless you!💕💕💕💕 @pastagrammar there was a lemon sauce that we used to eat this with (the first pasta) It was creamy but you could taste the lemon. Thank you for following the law: We absolutely needed to see how deeply Eva loves that Gorgonzola sauce. You two are among the very best this platform has to offer. Salute!
Thank you for reminding me about the pre-order. I'd forgotten! Pre-ordered and anxiously awaiting delivery.
Eva, I would love to see you make Ricotta! ❤ I just found your video of you making Ricotta! Thanks!!!!
When you announced your book I couldn't wait to get my hands on it. Now your making me wait like a game a game from Nintendo (Zelda).
I cant wait for sunday to see Eva cook..I love her way of cooking
I must buy your cookbook
Thank you for showing us to make so many wonderful italian recipes❤
My mother in law taught me to make a meatball mix with fresh spinach and cheese rolled like a football or torpedo and fried in olive oil..it's an appetizer and she called it long johns???she said her Sicilian mother in law taught her to make these
Sounds good, never heard of it. I wish I knew what other ingredients are in there. I love appetizers!
Loving this!

Hooray, another Swiss chard and breadcrumb recipe! I planted an obscene amount of chard this year because of your other chard and breadcrumb dish.
Awesome!!!! Going to try this one. Have to get a gnocci board.
oooooooh, il paradiso in terra.
now I am hungry again.. I wonder.. with Fall coming up, might Eva explore some "sweet chestnut" dishes?
You know that you both have outdone yourselves this time. These pastas look unbeatable! Mamma mia!
I love the look of ecstasy on your faces when you take a bite! And Eva's fork twirl is everything 😘

I can't wait to get your cookbook! I'll be making gorgonzola pasta sauce tonight.
I will try the last one! I love Gorgonzola❤
Well, that's a great law! You're both adorable!
As a disabled person, often eating just one meal a day on welfare (in Germany...) I eat better because of your recipes. Good luck with the cookbook... I'm going to try and save up to afford it for a Christmas gift to me.
Those look amazing.
Happy to see that I can pre order your book on the Amazon UK site❤❤
Eva is such a great cook.
Pre-ordered the cookbook over here in Holland, Amazon.nl had it listed too
