I would love to execute this deceptively simple recipe perfectly just once. I know it will be worth it as I've eaten khachapuri in a restaurant and it was more delicious than I thought it would be. Thanks Andy for reminding me to give it a crack again. I will trawl the Eastern European delis to find the most authentic cheeses I can and give it a red hot burl this winter...to eat with soup.

This is the Adjaruli Khachapuri which is from Adjara regoin which capital city is Batumi usually the boat is higher than that but you got the mixing and dipping right 👏🏼 You have to try the Imeruli Khachapori (round shaped) and Lobiani which stuffed with beans with side of pickles 👌🏼😘
We stayed with friends of my wife who worked in an embassy in Moscow once. They took us to the local Georgian restaurant. This dish was a highlight for sure, but it was ALL delicious.

There’s a great little Georgian bakery on the waterfront in Seattle that serves a variety of these, including a favorite of mine: half is this cheese mixture and half is a mushroom stroganoff, topped with thinly sliced pickles. 🤤

Finally Georgian food getting a shoutout. There’s no comfort food like Georgian food. Khatchapuri, kinkhali it’s all just bread meat and cheese and it’s delightful. Wait till you get your hands on some of their Qvevri wine. Roll the cheese under the crust too. This seems more like a pide from Turkey.

Love some ajaruli. Cheese is very important for the quality and taste so it might be hard to find a good one in your local restaurant.
I stopped eating phallic-shaped food, so this loaf is perfect.
