That's a bit silly that you can't answer the call and its picked up on your phone. This technology was on my very first smart watch the Moto 360 I was using 5 years ago!
What's the range you're getting to your phone? Can you use quick replies to "reply all" in Gmail? Can you read longer notifications or do they get cut because of the chatacter length?

It is possible, just tap the home button and then the incoming call will be muted.

Yes. That's their only connection. If you don't need messages or notifications, you can turn it off.
