The lady with the kid made no mention did not offer to pay for even part of the seat. If there was enough comfortable room for the payer and the child and the mother had said she would pay for at least part of it then it would still be up to the paying passenger. The mother had no right to the seat or the embarrassment she gave the seat owner. I love kids not to crazy about some of their parents.
I cannot stress this enough. If you want to assure you have a certain seat, or your child a seat buy it. This is why... Now yes in this story the woman is plus size but we also don't know what else is going on with her. I for one have terrible ptsd. I pre-plan for this by buying an assigned seat. I've had people multiple times take it and just push me to another seat like the aisle. TRUST me... No one wants me sitting on the aisle.. Because no one wants the consistent exposure of being on that aisle to cause me to have a flash back mid air... And I shouldn't have to explain to people I have ptsd and this can happen... just to get the seat I paid for. Lots of people like me need to purchase a specific seat or even an extra one for reasons that make EVERYONE else happier or even safer. It is not difficult to purchase an assigned seat, or your child a seat. It's totally okay to ask to change them, or to use an empty seat that might belong to someone else, but if they say no respect it and move on. If it was important enough for you to have a specific seat or to put your child down to cause a stink it's important enough to pre-plan.
No matter what her size or issues, this lady paid for a seat and someone else who had not paid for the seat wanted to use it for free then got upset when she was told no. That is incredible entitlement on her part. The mother is absolutely the asshole.
The lady who purchased the two seats is in the right here, the mother of the child is in the wrong and entitled.

When I use to travel by train, I always paid for a seat for my child so that we were both comfortable on a 3 hour ride.

I think the mother of the toddler was fully in the wrong, and the lady was well within her rights to decline her the use of the seat
